The Caribbean Coconut Chicken Arepa is inspired by Moqueca, the Brazilian stew rich with coconut milk, red pepper, tomato, garlic, onion and lime. Chicken thighs are marinated in all those flavors and piled high in an arepa with arugula, citrus onions, radish and fresh herbs.
