Home Fries aka German Fries.
These were a staple at every diner, coffee shop, counter service and corner store.
They have a history and are still sold in Authentic German Restaurants and by those willing to go the distance.
It's a two part process with a few secrets and the taste is worth the labor.
I the past 20 yrs most places opted for what they call breakfast potatoes, which is nothing more than a frozen potato product that could be wedges, small red potatoes, pre-seasoned cubes etc. They are then thrown into a fryer.
These must be made in either cast iron or a flat grill.
Growing up you can see them piled mile high on the corner of a grill, then moved into position per order to crust the top for each order.

Making our meatloaf patties. Chef Tania has been working alongside me this summer.
She is an amazing young Chef, ServSafe certified from the HS Culinary program. Many of you know her from the evening shift.
Chef Lenny Wasser will be returning part time this fall as we grow into our 2nd season, yup. Cooked For You is now 1 yr old and there's no stopping us.
We're getting ready for back to school, holidays and more.
