Played around with reverse engineering the Brookie. Instead of a brownie with chocolate chip cookie chunks, I decided to take my chocolate chip cookie and stuff it with a brownie chunk. Yep. It works. At least for me. Now if I could only think of a name that wasn’t ridiculous. If I followed the idea of a “brookie”, it would be a “Chipbro”....which sounds like a tech product for dudes (CES might be ok with it). Or “Chibron” which reminds me of a character that could be in Star Trek. Any ideas out there?

My mini cranberry zucchini cakes. Studded with fresh cranberries and toasted walnuts, the vanilla glaze ties it all together. If you think you don’t like zucchini in your pastries, this one changes people’s mind. The finely grated zucchini (finely grated is the key), adds moisture and does not impart any “veggie” flavor.

Still working on refining the texture and it just may take sifting the almond flour a few more times. For now, this guy will bask in the sun and enjoy the view.

My brioche crescents. I know it’s not traditional, but I’m all about bending the culinary rules. It still has the tender and rich egg mouth feel and it’s rounded out with Baleine French sea salt. I only sprinkle a little bit because sea salt is saltier than land salt....et, voilà!

Made a fresh apple bundt cake with vanilla glaze and toasted, sugared walnuts. Ordered by a dear client, it warmed my heart to hear how happy they were. I bake a lot of love into what I do. I especially love the back story of how this pastry is being shared by family members traveling from all over the world to spend the holidays together. TBT - I had the great opportunity to meet one of my favorite pastry chefs and chocolatier. I used to watch his show regularly and learned so much. When I met him, he was so kind and gracious enough to take off the apron he was wearing and sign it for me. Not to mention, he’s an immense talent in the world of pastry and chocolate.

I saw a package of pumpkin madeleines at Trader Joe’s the other day, except they weren’t glazed with a vanilla glaze. It sparked my creativity to create my own version and I’m pretty happy with the flavor profile of these. The moistness is on point and definitely Proust tea-worthy.

My dear friends Invited me for lunch. It was fantastic as usual and then came dessert. I’m a huge fan of pavlova’s and love how it was adorned with candied zest of lime and a cassis cream as well as black currants (which is quite difficult to find). Pavlova is named after a famous Russian ballerina, Anna Pavlova in the 1920’s. If you ever see it on a menu (which isn’t as often as I would like), do order it. Thank you to my very special friends...you inspire me, always.

I love Thai red curry sauce and decided to create a new recipe. I sautéd some cubed chicken with red onions, added organic brown rice and carrots, together with a spicy Thai sauce. It’s my type of red curry stew... topped it off with fresh cilantro. Definitely a fall comfort dish, with a bit of a kick.

Yorkshire pudding is an old classic that I love to make. It was invented sometime in the 1700’s in Britain and still popular today. It has a crispy exterior with a custard interior. It’s typically served with a hearty beef stew (like the brits do), but it’s also great with any type of compound butter... my fav is strawberry butter with my homemade strawberry jam for a simple breakfast. They can also be made GF.

Felt nostalgic while making this for a client. This is my mom’s potato salad. It’s served cold and made with Idaho potatoes, red onions, oil and vinegar with a sliced hard boiled egg. I elevated it a bit with honey balsamic vinegar, Lebanese olive oil, red onion, cilantro, pink sea salt and ground tellicherry peppercorns. I can just smell the lamb kabobs my dad would be grilling in the backyard as me, my sister and brother would be running down the slip & slide, like maniacs. That’s the power of food....😁

This is my (unadorned) French cake made from a Madeleine batter. Not quite a Madeleine and not quite a genoise cake. I brushed it with a vanille simple syrup and served it with macerated strawberries, crème Chantilly and homemade tart lemon curd. I love the beautiful pattern the baking tin creates.

Purchased a new rose petal baking dish and love it. Although it has to be greased well, it’s a dream to work with. I initiated it with a lemon sponge Victoria cake which I brushed with a lemon sugar syrup and I will later fill it with raspberry seedless jam. Yay.
