Just days before the occasion of our 16th Anniversary at Alize, we met with our team to share the news that the Palms Resort & Casino has asked to end our partnership and that our last service will be on New Year’s Eve.

While we are filled with mixed emotions, it is the season of Thanksgiving and we choose to look at this period and circumstance with gratitude.

We are grateful to the Las Vegas Community that have embraced our fine dining restaurants since the very beginning and continued to support us over the past 37 years. Within our first year at Alize, we were recognized by the community in the Best of Las Vegas and just days ago we were recognized yet again with a Best of Las Vegas award – in the Best French Category. The idea of still being a Las Vegas favorite is quite humbling.

We are grateful to George Maloof for believing in our hospitality model over the years and providing us with the platform that is certainly one of the best restaurant locations in Las Vegas.

We are grateful for the many talented alumni who have passed through Alize’s kitchen and dining room over the years. It is with great pride that we look out at the Las Vegas dining landscape and beyond and see the impact that many of these professionals have made on the overall industry after their time at Alize. We hope to have an opportunity to share our kitchen with these fellow chefs one more time before the end of the year.

We are grateful to our vendors and partners that have worked with us for so many years.

We are grateful to our team, many of whom extend back to Andre’s Downtown on 6th St. A team that has an unwavering commitment to excellence is the best thing you can have and we are fortunate to always have the best in the industry on our side. We would like to extend a special thank you to Stavros Georgiou, General Manager for the past 12 years, and Chef Josh Bianchi for your guidance and leadership.

Last, but not least, we are grateful for all of our guests. We would not have been able to do what we love every day if it were not for your patronage. We would not have achieved every milestone that most restaurant operators strive to attain, without your support.

It is our hope to see you at Alize in the coming weeks as we approach our final service. It would be a pleasure to toast 16 years at the Palms and 37 years of dining excellence with each and every one of you. It would be an honor to sip a rare cognac in celebration of all of the wonderful lives that have touched ours in so many ways it cannot be expressed. It is often said that we are credited with being the first in our industry to set the tone of fine dining in Las Vegas and we are honored. We can certainly say that we are proud of the path we have chosen, the teams we have mentored and the many customers that we have served over the years.

We are wishing you the best of the coming holiday season.

Chef Josh Bianchi has Alba Truffles at Alizé. It is expected to be a short season, enjoy them on classic risotto, or Capellini Pasta, Trumpet Mushrooms and Chicken Jus or they go perfectly on the Mushroom Crusted Veal Loin. Have you ever enjoyed them shaved over our famous Dover Sole Veronique?
