This elevated all-beef meatloaf is steamed to keep it moist, then pan-fried for a deeply flavorful crust. Bolognese is familiar for a reason.

Chef Rang keeps the base simple with garlic, onions, tomato, and parmesan, then lets Spanish chorizo change the direction of the sauce. It adds warmth, depth, and a little more weight without losing the comfort of the pasta.
