Today we’re celebrating someone who has been an incredibly important part of the team. Over the last few weeks especially, Britt has stepped up in a big way and has truly been my right-hand gal in operations. Her willingness to jump in wherever needed and help keep things running smoothly has meant more than words can say.

And because she’s just that awesome, she was gracious enough to help with an event this morning—even on her birthday!

We will be out tomorrow morning serving breakfast only! Serving 9-11ish AM. Come out to support the Findley family. 🫶🏽

Three weeks ago, my world changed in an instant. What started as an early morning accident nearly cost me my finger. Thanks to the incredible care of the doctors and medical team, they were able to save it, and for that I am beyond grateful.

The road to recovery is far from over. Every day brings new challenges, and even the simplest tasks take a little longer than they used to. Food prep, lifting supplies, setting up events, and all the behind-the-scenes work that goes into running our food truck have become much more difficult. Some days are painful, some days are frustrating, but giving up has never been an option.

I want to give a huge thank you to my family for stepping up in countless ways over the last few weeks. Your support, patience, and willingness to help carry the load have meant more than words can express.

To our customers, thank you for your understanding, encouragement, and continued support. Whether you've waited a little longer for your order, shared kind words at the window, or simply continued showing up to support our small business, we notice it and appreciate it more than you know.

Despite the injury, we've continued showing up to every event we had planned because we love what we do. Bringing great food to our communities is something we're passionate about, and that's what keeps us pushing forward.

Recovery may be slow, but we're taking it one day at a time. Thank you all for bearing with us through this chapter. We wouldn't trade this journey, the people we've met, or the support we've received for anything.

Here's to healing, perseverance, and continuing to serve up great food along the way. 🫶🏽🚚

We’ve had a limo pull up to order from our food truck before, but today was a first — horses ridden right up to the service window! 🐴

Only in Nebraska can you go from serving customers in a limousine to serving customers on horseback.

Thank you for having us out and for making today one to remember. We love being part of these unique Nebraska moments and appreciate everyone who stopped by to support us!
