I've been wanting to try this recipe on my Jasmine rice bag, Pineapple Fried Rice. It's name is nothing close as there is no frying and the main ingredient is shrimp.

I'm not a fan of cilantro except in Mexican dishes and this was more on the side of Thai.

I used fresh pineapple that I froze after cleaning the beast. And, my biggest challenge was finding fish sauce, which I eventually did. Thus, here is the recipe I made:

3 cups of prepared jasmine rice
A bundle of scallions, silver sliced
1 bag of my frozen pineapple, drained/diced
3 garlic cloves, minced
16 oz of small shrimp, peeled
3 TBS olive oil
2 TBS soy sauce
2 TBS Asian chili sauce
1 TBS fish sauce
Seasoning of choice and I chose sriracha

Saute the garlic in the oil until golden. Add the scallions and pineapple/mix well. Add the rice and sauces/mix well. (Mine was a little 'thicker ' than I'd like, so I doubled up on the sauces and added 6 oz of beer - LOL). Add the shrimp, stir, cover and turn off the heat. Come back in 10 minutes and repeat, then serve.

I used my wok and I was surprised w the flavors. The pineapple didn't make it sweet as the other ingredients took over. Best part. . . EVERYTHING was fresh AND I have leftovers!

Spinach / Artichoke Pizza. . .

1 8oz package fresh spinach, chopped
1 can of Artichokes, chopped
6 cloves of garlic, minced
1 whole onion OR 1 bunch of scallions, chopped
8 cups of mozzarella cheese shreds
4 tbsp real butter
1 package of pizza dough (I buy it at Walmart for $1 in the refrigerated section by the salads)

Spread cornmeal and parmesean cheese on your baking surface. (I use a large stone). Place dough in the middle and drizzle w olive oil. Spread evenly and let rise for 4 to 6 hours.

Spread dough out around the full perimeter of your baking surface, then pull the edges to load w cheese, tuck and seal. Saute the garlic and onions in a tbsp of butter until soft. Mix w spinach and antichoke.

Spread 3 cups of cheese onto dough, then a top w spinach mixture, then another 3 cups of cheese on top. Place butter pats around the inside edge of the cheese stuffed crustm

Bake in a 350 oven for 40 minutes.

Thus, I bought my own kit AND a sashimi knife.

This batch is smoked salmon, cream cheese and scallions w sriracha sauce and wasabi!

Yummy!!!

Crab Stuffed Flounder

This recipe is simple. . . .
4 flounder filets
1 can lump crab meat
6 scallions, thinly sliver sliver
1 cup of Panko crumbs
3 eggs
Seasoning to your taste. I use Cajon seasoning myself.

Mix all the ingredients together and do not drain the crab meat. Spoon equally onto the filets. Roll and place seam side down in lightly sprayed glass dish. Season filets and bake at 350 degrees for 20 minutes.

THE Best Stuffed mushrooms. . . .

1 8 Oz package of good sized caps, stems attached
1/2 lb of bulk sausage, browned. Do not drain!
1 green pepper, filaments removed, diced thin
1 red pepper, filaments removed, diced thin
6 to 8 scallion stalks, thin sliced
2 cu chopped fresh
1 cu Panko crumbs
3 eggs
1/2 grated Parmesean cheese
2 tbs Cajun seasoning, optional
1/4 real butter,

Remove the stems from the mushrooms and finely chop. Add to all other ingredients, less seasoning and mix well.

Rub caps in melted butter and display open side up in a sprayed glass dish, preferably 9"x9" minimally. Spoon fill and press mixture into each cap and evenly spread the remainder over the batch.

Sprinkle seasoning on top and bake at 350 degrees for 20 minutes.

Spicy shrimp over ziti

Easy recipe and I highly recommend you marinate overnight.
1/3 cu olive oil
1/2 cu parmesean cheese
1/4 cu minced garlic
2 tbs soy sauce
1 tbs brown sugar
1/4 tsp each of sea salt and ground black pepper
1/8 tsp red pepper flakes

Mix together in a 1 gallon zip bag and add shrimp

I pound of shrimp, tails on is perfect

Cook ziti according to your liking and drain. Leave covered. Pour shrimp and marinade mixture into skillet and cook until shrimp is pink. . . About 90 seconds each side. Pour over pasta and mix well. Add slivered scallions (I used 3 for 1 pound of shrimp), more parmesean, some Tony Chachere's original creole and enjoy!

Pumpkin Squares

1 box yellow cake mix
1 stick butter
1 egg

2 c. pumpkin
4 eggs
2 tsp. cinnamon
1 tsp. nutmeg
3/4 c. sugar
2/3 c. milk

1/4 c. sugar
2 tbsp. butter, melted
1/4 c. chopped nuts, optional

Mix cake mix, 1 stick butter and 1 egg. Grease bottom only of a 9 x 13 inch pan. Place mixture in pan, reserving one cup for topping. Bake at 400 degrees for 10 minutes.
Mix pumpkin, 4 eggs, cinnamon, nutmeg, sugar and milk, then pour over baked crust. Then add to cup of reserved mix: 1/4 cup sugar, 2 tablespoons melted butter, 1/4 cup nuts. Then blend like as for pie crust. Spoon over top of filling. Bake at 350 degrees for 50 minutes. Cool and cut into squares.

Perfect prime rib like beef with any cut . . . Coat the exterior in a paste of bread crumbs, hot mustard and horse radish. Bake at 500 degrees for 5 minutes per pound, then shut off the oven. Set the timer for 4 hours and do not open the oven door. You will have the most tender roast/meat ever done perfectly like prime rib without the cost!

Tip of the week . . . whenever you marinade your meat, fish or chicken, use the leftover marinade to pour over Jasmine rice or veggies to continue your flavor throughout your meal. Whether you bake or grill, save the marinade juices (you'll need to put them in a pot if you grill and heat them to a safe temperature first) and enjoy. By the way, Jasmine rice is the only white rice that isn't bleached and it cooks perfect every time!

Time to clean out the pantry and fridge?

Breakfast casserole:
This serves 12 and can be cut proportionately . . .
1 whole onion, chopped
1/4 pound of bacon, cooked and chopped - keep the grease
1/2 pound of browned sausage, cooked and chopped - keep the grease
8 oz package of frozen chopped spinach, thawed and drained
2 loaves or the equivalent of same of stale bread, bagels, muffins, etc torn into small pieces
1 green pepper, chopped
1 cup of your favorite shredded cheese or knife chunked

Combine in a large bowl, including the grease from the bacon and sausage. Mix well and add 12 beaten eggs and 1 cup of water. Pour into a well greased, preferably glass 11x17 deep oven safe dish.

Bake for 45 minutes in a 350 degree oven uncovered. Let cool about 20 minutes, then slice and serve with your favorite seasonings.

You can add diced tomatoes, garlic or anything else you'd like for you own personal taste.

Antipasto Salad . . .

I have looked for recipes all over that had the ingredients I liked and everything had lettuce, which I think defeats the purpose. Thus, I created my own . .

1 cup of chopped onions
1 cup of chopped green peppers
1 cup of chopped banana peppers
1 cup of slivered black olives
1 cup of slivered jalapeno peppers
1 cup of diced mozzarella balls
1 cup of diced pepperoni
1 cup of diced hard salami
1 cup of diced Genoa salami
1 cup of diced cherry tomatoes

Mix well

Season with garlic salt, pepper, Montreal spicy steak seasoning

You don't need anything else and it's all healthy!!

Bacon / buffalo blue cheese baked chicken:

Chicken can get very dry in the oven if left in too long. . . Yet, you don't want to eat it bloody. Thus, you can use boneless or bone in breasts for this recipe.

Knife slice the breast meat opposite the grain, but don't cut all the way thru.
Place in a glass dish sprayed with PAM or something similar
Coat with Buffalo Blue Cheese salad dressing
Top with crumbled bacon
Bake 30 minutes in a 350 degree oven.

Serve with baked potato wedges and pour the extra sauce over the potatoes for additional enjoyment.

This can be done with one serving, 2, or as many as you want to serve. The cutting of the breast is the key to cooking thru.
