Lasagna dell'Impostore Genovese - Layers of fresh egg pasta sheets with besciamella, Genovese ragu (cubed beef, onion, white w**e cooked down), fresh mozzarella, smoked blue cheese, ricotta, and soleggiati semi dried tomatoes. It is fished with besciamella, a Pecorino Romano/parm blend and a balsamic glaze.

Finished product! Fiori di Pasta alla Genovese - Fresh egg and white truffle dust pasta stuffed with Genovese ragu (cubed beef, white w**e, loads of onion cooked all day) and ricotta, then rolled to resemble a flower. It is cooked in a besciamella and topped with a Pecorino Romano/parm blend.

Trying my hand at this beauty, Fiori di Pasta alla Genovese. Fresh egg pasta with white truffle dust, stuffed with Genovese ragu and ricotta, then formed into a "flower." It'll be cooked in besciamella and maybe finished with a truffle infused Sicilian EVOO. Gonna figure that out when we make one for staff before service.

Really love the way the flavors came together! Grancappelletto Romagnoli Affumicato - Fresh egg pasta stuffed with Ricotta, Casatella, Parmigiano Reggiano, and Grana Padano, tossed in a sauce that was started with black garlic, soffritto, Italian Long Hot peppers, and fennel. Butter/white w**e, a combination of San Marzano, fresh cherry, semi dried pizzutello, and soleggiati tomatoes are added as well as heavy cream. Moody blue smoked blue cheese is folded in, it's finished with crispy guanciale, and a truffle infused Sicilian EVOO. Ask your server to add long hot pepper relish for extra spice.

Fried Green Tomato "Caprese" - Breaded, fried green tomatoes over a bed of balsamic greens, with marinated fresh mozzarella, topped with our Sun Dried Tomato pesto.

Grancappelletto Romagnoli Burro e Oro (with a twist) - Fresh egg pasta stuffed with Parmigiano Reggiano, Grana Padano and Ricotta, tossed in a sauce consisting of butter and a combination of San Marzano, semi dried pizzutello, and soleggiati tomatoes. It's finished with truffle infused Sicilian EVOO.

Mozzarella en Carrozza - "Mozzarella in a Carriage" - Italian street food we haven't done since the food truck! Think grilled cheese taken up a notch... Block mozzarella sliced into rectangles and sandwiched between two slices of bread, sliced on an angle, breaded and fried. It's served with our Rosato sauce. Obviously this is pre-fry... Come check out our Grouper and Crab entree special while you're at it!

Rigatoni alla Boscaiola aka, The Woodsman. Fresh egg rigatoni pasta from , crumbled Catullo's Italian sauseeeeege (), peas, sauteed mushrooms, sauteed onions, in a lighter version of our rosato sauce, with ricotta added.
