1. Duck breast stuffed with a mushroom shallot farce, served alongside a duck fat potato pave topped with creme fraiche, blackberry demiglaze, and a roasted trumpet mushroom.

2. Pato Sofrito Empenada filled with ground duck, sofrito, and Oaxacan cheese, topped with an aji amarillo aoili and pomegranate chimichurri.
