Listen I am not a fan our politicians locally, it’s no secret and I will always make sure everyone knows that is no secret but when State Auditor Diana DiZoglio comes to town, I’ll leave the kitchen and run over to grab lunch with her. More than a firebrand but a real “one of us”. Happy to have gotten the call. When I arrived back, the line was out the door so I apologize but we got it done!!

Let’s talk about Flan. Flan is something that texturally I like but perhaps I’ve just never had a good one. Sometimes the caramel is to bitter , the flan is grainy or the taste is just sweet. Today I set out to make one for my taste buds and it’s very good. I lightened the caramel by lowering the color to a lite amber and took out the evaporated milk and replaced with heavy cream. An oz of rum just for some dept and real vanilla bean paste. I have to say it’s a bit more complex than the ones I have and is just about perfect (for me).

Listen if I could eat like this every night with a glass of w**e, I’d be set. Only I don’t drink and this is to much prep to make all the time. Country mixes olives, marinated mushrooms, artichoke hearts, baby onions, sweet red peppers, marinated mozzarella and 5 year aged brick cheddar, garlic, herbs, spices, red w**e vinegar and olive oil. I’m certain I’m forgetting a few things but the very rustic Antipasto is available tomorrow. Eat like your worth it, because you are. As always the south end has you covered, grab an antipasto from here and stop by south end liquors for a nice w**e. You’re good to go. Local is better.
