Before Tombachi ever opened, we made dozens of yumyum sauces.

Every batch got a Post it note.

“Tombachi #1”
“Tombachi #2”
“ #3”
…and so on.

After weeks of testing, we finally had a winner.
#8.

The problem?

The night before our first opening day…I lost the freaking Post it notes

I tore apart the kitchen looking for them.

Nothing.

I tried making the sauce from memory, but it just wasn’t the same.

At that point I basically gave up and told myself:
“We’ll just have to open with a different sauce tomorrow.”

Which honestly sounds insane now.

It was opening day, 2 hour before our event. After loading the truck, I walked back into the commissary one last time.

And there it was. One single Post it note.

Upside down.

On the bottom shelf of the prep table.

I flipped it over and almost lost my mind.

“TOMBACHI SAUCE #8”

So with like 60 minutes to spare, I scrambled to remake the entire batch before opening day.

Sometimes I think about how different Tombachi would be if people didn’t fall in love with that sauce.

4 years later and we still use the exact same recipe, but it’s kept a secret 🤐
