Chef Taylor stepped into the position in February 2026 ready to bring his passion and expertise to the kitchen. Hailing from Texas but having lived in Colorado for the past several years, he brings a combination of childhood favorites and unique visions of Colorado classics to your plate.

From nostalgic bites like the Chess Pie to unique twists on appetizers like the Sumac Guacamole with Chicharrones, there's a new flavor to taste in every dish.

Fresh heirloom tomatoes, juicy peaches, sweet honey vinaigrette, crispy garlic, and fried sage come together in our Tomato Peach Salad - a new seasonal favorite for good reason.

Add a house-made horchata on the side, and you've got a combo worth coming back for all season long.

Take a peek at what goes into our handmade tortillas and nopales enchiladas 🔥.

Our masa is Colorado-loc, purchased from and sourced from the Hopi Tribe. Each morning our team presses each individual tortilla to bring you a taste of real ingredients, and unbeatable passion behind the product.

Today we made our nopales enchiladas: nopales and asadero wrapped up in those fresh tortillas, plated with a cherry guajillo sauce.

For every enchilada plate purchased, we’ll also be donating to our official partners, .sun, a Colorado-local organization which aims to develop new opportunities for tribes and Native American individuals.
