El Mexicano, an ode

To the griddled cheese that crisps at the edges before it ever meets the tortilla.

To the seared diced beef, caramelized and a little stubborn, in the best way.

To the salsa Mexicana, doing the quiet work of balancing everything else.

To the avocado crema, cool and unbothered, holding it all together.

To the corn tortilla, humble and essential, like it always is.

Not the flashiest taco on the menu. Just the most correct one.
