Meet Olive-Or-Twist, one of Valentino’s new fall cocktails 🍊

Inspired by a Lemon Drop Martini, it brings together premium vodka, blood orange limoncello, house-made vanilla syrup, fresh lemon juice, and blood orange juice squeezed in-house daily. Egg white adds a smooth texture, while a few drops of olive oil from Puglia give it an unexpected Italian finish.

Meet our new Executive Chef, Christos Tsokos!

With more than 20 years in the kitchen, from family-run spots in South America to Michelin-starred fine dining, few chefs bring as much hands-on experience as he does.

Christos grew up in the restaurant industry and landed his first kitchen job at just 14. He went on to earn his culinary degree in California, sharpened his skills in Washington, D.C., and then came back to Tampa, where he led the kitchen at Rocca as Executive Sous Chef.

Now he's settled in Clearwater and made Valentino his home.

Every step of that journey shaped the way he cooks today: skilled technique, quality ingredients, and food made with real care. And through it all, he brings the warmth that only comes from growing up in family kitchens.
