A mezcal shot and a chaser… but Cariño's way.

Recently added to the beverage program, Ray Medina’s take on the classic pickleback swaps pickle juice for a house-made chayote brine made from kitchen scraps of chayote, cilantro stems, serrano, vinegar, salt, and a touch of MSG.

Bright, savory, a little spicy, and surprisingly refreshing, served alongside smoky mezcal in freezer-chilled shot glasses. A simple idea with a lot of personality, and likely to become a staple next door at .

An unforgettable night at Cariño for 𝗧𝗔𝗖𝗢𝗦 𝗪𝗜𝗧𝗛 𝗙𝗥𝗜𝗘𝗡𝗗𝗦 with Chef John Shields of MICHELIN three-starred .

Guests were locked in from the first course to the last. From Smyth’s beautiful oyster course to both teams working side by side so seamlessly throughout service, the energy in the room was incredible all night long.

Most importantly, the evening helped support the mission of Latinos Progresando and the work they continue to do for the community. A big THANK YOU to everyone who joined us for such a special dinner.

This rare evening brings together two of the country’s defining voices in contemporary Mexican cuisine—both James Beard finalists known for their shared passion for nixtamalized masa—creating a truly unforgettable experience.

From Charlie Trotter’s to Alinea alongside Grant Achatz, Chef Shields’ path helped shape some of the most celebrated kitchens in modern gastronomy before building Smyth into one of the country’s most revered dining destinations.
