We believe zero-proof creations should hold as much complexity, balance, and thoughtfulness as our cocktails, our food, and everything else we do here at PAGU.

Meet THE WHEY HOME ☁️🍸

When we make our house labne for the Txips & Dip, we don’t discard the residual whey, we celebrate it!

Here’s the breakdown:
whey
's garden sorrel
anise hyssop from john's farm
a touch of lime juice.

The magic trick? 🤫
We shake it once with ice, then strain and shake it again dry. This double-shake technique creates a luscious, frothy head that looks and feels exactly like an egg-white cocktail, minus the egg. Just a pure, pillowy cloud of frothy goodness right on top.

It’s complex, sustainable, and scrumdidlyumptious.

Earlier this week, our dear friend and Cambridge photographer Suhayl was the victim of a devastating hit-and-run accident while riding his bike. He is currently in critical care at Beth Israel ER with a broken spine.

If you’ve spent time in Central Square, you know his work. He captured the spirit of our neighborhood through the "In Central I Can" campaign during Covid, and has spent years documenting beautiful, raw moments on film inside PAGU, Pammy’s, Cicada, Althea, and so many local spots.

Suhayl has given so much art, love and impactful storytelling. Now he needs our help. The road to recovery will be long and difficult.

Think non-alcoholic drinks are just sweet, fizzy, citrusy juice? Think again 😏

We’ve combined the rich, tangy whey from our yogurt-making with wild, foraged spruce tips and a homemade knotweed syrup, gracias a nimble hands 🤩

The foraging window for these ingredients is blink-and-you’ll-miss-it, but we caught them at their absolute peak. It’s savory, complex, and full of flavor😲
