We don't do Prime Rib often, but when we do, we go all out! Tonight it's the 109, aged 21 days. The fat layer covering the exposed meat below the ribs has been put back into place, instead of being removed. The addition of the fat helps protect the meat during cooking and adds additional juiciness to the cut. It's considered to be the ideal variation of rib roast.
