Today we’re proud to introduce San Agustin, Zaca Coffee’s very first Single Origin coffee, sourced from the beautiful Huila region of Colombia.

Unlike a blend, a single origin coffee comes from one specific region, allowing the unique flavors of the land to shine through in every cup. San Agustin is bright, smooth, and naturally sweet, with tasting notes of nectarine, red cherry, and caramel.

To celebrate the launch, our Head Roaster, David Wilson, will be at our Buellton shop today pouring samples and answering all of your questions. Whether you’re a seasoned coffee lover or just curious about what makes a single origin so special, we’d love for you to stop by and say hello.

San Agustin is available starting today in 12 oz bags at both locations and online.

Behind every great cup is a whole lot of tasting.

Today we’re sharing a behind-the-scenes look at Zaca Coffee’s Head Roaster, David Wilson, leading a cupping as we continue dialing in our very first Single Origin release. ☕️

Cupping is the coffee industry’s standard tasting process. By brewing multiple samples side by side, we evaluate aroma, acidity, body, sweetness, balance, and finish to better understand what makes each coffee unique. It’s how we refine every roast and ensure what’s in your cup is the very best it can be.

We’re getting close, and we can’t wait to share this special release with you. Stay tuned!
