To keep her spirit alive we embark on a new journey together with Chef Denise’s cookbook, "The Aroma of Czech Cuisine." Originally from Czechoslovakia, Denise began developing her culinary skills from her mother at a young age while living in Prague. She perfected her cooking techniques in restaurants all over the world, learning in kitchens everywhere from Paris, France and Munich, Germany to Boulder, Colorado. Eventually, Denise and her husband Jimmy Mazal moved to Boerne to raise a family. After her four children were all grown up, Denise and daughter Veronica decided to open Little Gretel in 2009. Little Gretel – Created with love and passion, like the skilled Czech chefs who migrated for years to Vienna with their Czech recipes, Little Gretel has selected the best, well-tested recipes from Chef Denise’s own heritage in the Czech Republic, family owned cookbooks and invaluable experience in family-owned restaurants in Boulder, Colorado. The restaurant features dishes from Denise’s past, including many unique menu items such as authentic Czech, traditional German and American favorites not found anywhere else in the Hill Country. In its first short couple of years, Little Gretel has obtained several awards including “The Best Business of the Year 2010”, by the Greater Boerne Chamber of Commerce; the best top 10 Brunches in San Antonio by the San Antonio Express News as well as consecutive year awards from “Talk of the Town” News/Celebration Media U.S. Our Executive Chef, Denise, was also honored with the award BEST CHEF AMERICA. As we open the door to our restaurant every day, we continuously strive to challenge ourselves to bring our restaurant to a higher level.

𝐒𝐚𝐧 𝐀𝐧𝐭𝐨𝐧𝐢𝐨’𝐬 𝐎𝐤𝐭𝐨𝐛𝐞𝐫𝐟𝐞𝐬𝐭 🍻

The third annual Oktoberfest at La Villita returns Sept. 25 to 27 for a free, family-friendly celebration at Maverick Plaza in La Villita Historic Arts Village in San Antonio. Set in a shaded plaza just steps from the River Walk, the festival will feature food, music, dance and traditions representing the German, Alsatian, Czech, Polish and other European communities that helped shape South Texas.

The Saturday Culinary Showcase features chefs Aaron Juvera of Southerleigh Fine Food & Brewery at Pearl, Denise Mazal of Little Gretel of Boerne, Johnny Hernandez of Grupo La Gloria Restaurants, Janie Romo of Ms Chocolatier, Flor Vergara of La Gloria Pearl and Tortillería La Gloria, and Chef Laurent Rea of Brasserie Mon Chou Chou at Pearl.
Oktoberfest-inspired dishes will be available for purchase. Cooking demonstrations continue all weekend in the Kitchen Campus demonstration kitchen, concluding Sunday with a demo highlighting the connection between German schnitzel and Texas chicken-fried steak.

Boerne friends may recognize her face — and definitely her food.

Denise Mazal Resnerova is an internationally trained Czech chef and the former owner and executive chef of Little Gretel, the beloved Czech/German restaurant that was part of Boerne’s food scene for years. Her recipes, especially her pastries and kolaches, became local favorites and introduced many of us to authentic Czech cuisine.

Today, she continues preserving that heritage through her cookbook, The Aroma of Czech Cuisine, sharing traditional recipes and stories passed down through generations. This is Boerne at its best — deep roots, rich culture, and the people who helped shape our town one meal at a time. 🤍
