My first attempt at gnocchi and it was awesome. Made a creamy mushroom sauce with spinach and a perfectly cooked tenderloin. Not a bad dinner. #

Crazy what we have been able to do in 8 years! From a back yard cook who knew nothing (other then he liked to BBQ), to studying the art and science behind how to make great BBQ, to competing at Texas Food Championship next month (for the 2nd time)! The first year I competed at Texas Food Championship, I won the golden ticket and was invited to compete at World Food Championship, last year.

Follow along as I start our journey to Texas Food Championship and try to earn another golden ticket to compete at World Food Championship this year! Can't wait!!!!!

Who said bbq has to be meat only. Today we did a smoked eggplant lasagna. It had a basil/ garlic marinara, as well as mushrooms and squash with the eggplant. Don't forgot to add this to your next catering order.

Tonight's dinner was a prime ground brisket burger with caramelized onions, goat cheese, arugula and a spicy aioli. Served with sweet potato fries sprinkled with truffle cheese.
