Last night we had the privilege of visiting our next Crowded Table host dangerMOON! They raise mangalitsa pork. These furry piggies are a Hungarian heritage bread - a cross between a Hungarian pig and a European wild boar. They are cold hearty and mellow in nature. They grow slower than commercial pigs so it takes much longer to reach weight, but it is worth it. Their dark meat is highly regarded for its deep flavor!

When the idea of white pork became the craze in the 1990 Mangalitsa almost became extinct with only a couple hundred left. Efforts to save the breed have been successful and it’s now a luxury pork product.
