What arrives on your plate begins far from the kitchen, out in the sea waters of Sagay in Negros Occidental, where local sea urchins are carefully harvested by manual collection during low tide. It’s a long and meticulous journey shaped by many hands: gathering with respect for the fishermen and the ocean, patiently processing, gently smoking, skillfully extracting, and handling each piece with the care it deserves.
