I've been meaning to make these for a while now, and today it finally happened! Chocolate Guinness cupcakes for all you decadent stout lovers out there and finished with a smooth rich butter cream icing. As Autumn sets in, it is definitely the time of year for ultimate comfort food and these bad boys certainly tick the box.

Chocolate and Guinness, it's a match made in heaven.

A taste from my home town. Harry's Roadhouse is an institution. I've been going there since I was a kid and whenever we visit Santa Fe, me and my boys are sure to pop in. It's a beautiful Cookbook with a few of their staple recipes. They are famous locally for their tarts, or as well call them back home "pies", so I figured why not bring one over here to Dinis!

From the reaction today to this blueberry beauty I'd say it was a hit here in Ireland as well!

Anyone feeling chocolatey today? This beautiful rich smooth creamy belgian chocolate tart will definitely tick the box. Plus it brushed with edible gold dust so what's not to like?

Chocolate is one of my weaknesses, so needless to say I'm a fan.

I've been experimenting in the kitchen for pretty much as long as I can remember. Some the experiments worked, and some didn't. I remember making these pancakes as a kid that left off this wierd gassy burst when you bit into them. This is not that.

This experiment worked! Its a bread pudding marbled with a dark chocolate ganache, peppered with dark and white chocolate chips served with a scoop of double chocolate ice cream. There is a subtle saltiness in the pudding that pairs beautifully with the rich creamy sweetness of the ice cream.

We aren't all about cake and coffee out here at Dinis Cottage. We are also about feeding you part way through your adventure. Our menu features a range of hearty sandwiches and soup using fresh local ingredients wherever possible.

Shown above is our parma ham baguette served in a crusty roll, with fire roasted red peppers, organic olive oil, peppery rocket, and salty grana padano cheese. It has proven to be a hit.

All of our sandwiches are made fresh to order.

It's like a fairy tea party! Honey cake with a meadowsweet infused butter cream icing topped with edible heather flowers. Yes, it is very sweet, but the flavour of the honey comes through beautifully in this moist delicious cake.

Plus, fun fact, meadowsweet is the plant that us humans derived aspirin from.

The Meeting of the Waters is a very special place. Located right behind Dinis Cottage, it is a place of true tranquility and one of my favourite spots to sip an iced matcha, or any drink for that matter.

Last year, when I was pregnant, I genuinely had a birth plan for if I went into labour while at the Cottage. It involved walking over the Old Weir Bridge into the woods at the back of The Meeting of the Waters and having my baby somewhere secluded surrounded by all that luscious nature. It didn't work out that way, he was born at home, but it speaks to the sense of peace, beauty and magic of the spot.

Next time you are at Dinis, try taking your coffee down there and sip it while peacefully listening to the sound of trickling water and chirping birds. It'll definitely put you in a good frame of mind.

We eat with our eyes first, followed by our sense of smell and finally brought to our taste buds. With this in mind, our bagels and lox is a true feast for the senses. Made with Kerry smoked salmon, garnished with homemade pickled red onions, capers, and dill. Made fresh to order.

I just can't get over the vibrant colours of this one, plus it tastes beautiful too.
