Have you tried our banana walnut muffins this year? They are super tasty, soft, moist with a lovely crunch on the top from a sprinkling of demara sugar. I've always been a big fan of muffins so perfecting,l one for for the cafe was definitely on my to-do list. I am pretty darn proud of these beauties. It's far too tempting to eat all of them myself, but that's not why we're here. We are here to share this beautiful goodness with all of you, wonderful people. We have them in regularly enough, but not all the time. Be sure to keep your eye out for these.

I've been having a lot of fun curating our new lineup of artisan Irish soft drinks. Our range is nearly there, but now I need YOUR help!

Which would you choose?
🫚 Ginger beer with an extra zing from Irish grown chile?
🍋 Lemon with a refreshing hint of mint?
🍊 Grapefruit complimented with a touch of Atlantic sea salt?

🍎🥂 Outside or inside, this sparkling apple juice is a wonderfully refreshing drink on a hot sunny day. Just the right amount of sweetness and zinginess with a crisp bubble, it makes a good companion for picnic or cake. It's a good size for sharing, or keep it all for yourself, we won't judge.

The sun is shining and we have brownies in stock! What better way to celebrate that than by walking (or cycling, or sailing) down to Dinis Cottage and having one of our luscious slow baked brownies and an iced coffee? We're open 10 to 5 on this glorious day. Looking forward to seeing you all

This delightful soda combines three things I love.

1. Foraging - wandering the hedgerows to find delicious nutritious food. Nettle is a powerhouse of nutrients and hormone balancing goodness.

2. Hand made local food - made by the lovely Rose in County Cavan, hand foraged and made in small batches. Each can bought is supporting a real person in a real community here in Ireland.

3. Deliciousness - what are the other two if it isn't paired with being enjoyable to consume? And this drink is absolutely that, light, refreshing with a little lime to add zing to the nettles' earthiness.

Pop in to Dinis and give it a go!

🍌🥜 Inspired by a recipe from Ghana with a comfort food twist.... this Banana Walnut cake is delightful. The sponge is wholesome while the peanut butter caramel topping makes it a touch more exciting and gooey. This banana bread just levelled up!

I've always loved Banana bread so finding this recipe was very exciting. I'd love to hear your thoughts on how it turned out.

Inspired by Valencia, this flourless orange cake tastes like summer. It's moist, bright and oh so satisfying. We are having loads of fun playing with our sunny day cakes and I think this one will definitely make the cut. And if you are really loving those zingy orange flavours, be sure to pair it with a freshly squeezed orange juice. It's like you walked to Dinis and ended up in Spain!

The sun is shining! And what better way to celebrate than a delicious rich, creamy matcha cake. We've iced it with a white chocolate matcha ganache and fresh strawberries because strawberries and matcha are always a good combo. Why not pair it with an iced strawberry matcha latte and really go to town?

This is basically my birthday cake but I didn't actually eat any of it myself. I'd much rather share it with you all.

Our next donut has landed! And it has proven to be a big hit. Named "The Beaufort Bosch" by , it's a creamy custard filling with a rich chocolate glaze, so basically a hand made "Boston Creme" for the Americans in the audience. It's flown out the door and I'm not even a little bit surprised. We've paired it with Pecan Caramel Crunch ice cream for an extra decadent Killarney treat.
