One of three starter options I created for a large corporate November event:

Beetroot-cured salmon • beetroot carpaccio • lightly pickled cucumber ribbons • pickled radish • horseradish crème fraîche • apple, dill & horseradish sauce • rye crumble • edible flowers & micro herbs

Inspired by traditional Swedish Christmas flavours, with an elegant Nordic twist. Fresh, colourful and festive, with a distinctly Scandinavian look and taste.

But did it make the cut for the final menu? 👀

One of the three desserts I created for the event at The Landmark London later this year… but did it make the cut?

Light-as-a-cloud lingonberry mousse with delicate macaron, pickled lingonberries and vibrant lingonberry gel, balanced with brown butter financier, crunchy caramelised oat praline and a dusting of white chocolate snow.

Tart, creamy, crisp and beautifully vibrant — a gorgeous work of art inspired by Sweden’s wild forests under the first frost of winter. ❄️✨

From Italy to another iconic venue — ✨

Today, tasting my Swedish-inspired three-course menu created for 500-guest Christmas Luncheon this November.

Creating a menu for 500 is always a challenge — making sure every dish works beautifully on this scale without losing the detail.

Three starters, three mains and three desserts tasted today - but which ones made the final menu? You’ll have to wait until the gala to see! 🇸🇪✨

Another amazing day in gorgeous Ravello 🇮🇹✨

A 5AM start… breakfast boxes packed and delivered, followed by a full lunch buffet. Busy, busy — but what a place to be working!

Tomorrow is my final lunch service here before heading back home to London, straight into planning and prepping for a large private party this weekend.

From Ravello sunshine to the London kitchen… no rest for the chef! 👩‍🍳🤍

Today started with angry clouds and pouring rain… but the Ravello sunshine came through just in time for lunch service. ☀️🇮🇹

Lunch done, now straight into dinner prep — cooking for 50 guests tonight. Full-on kitchen mode! 👩🏼‍🍳

Tired feet, lots of stairs, lots of food… and absolutely loving Ravello. 🤍🍋

Another day, another delicious fresh lunch in Ravello 🇮🇹🍋

My early-bird walk to work this morning — a classic, gorgeous Italian villa just 150 stairs from my hotel — was breathtaking in every sense of the word… especially the stairs! 😅

And finally, all my kitchen gear that was stuck in Rome made it to Ravello late last night. One very happy chef! 👩‍🍳✨

Not a bad place to call the office for a few days… 🤍🇮🇹 🍋

First lunch in gorgeous Ravello 🇮🇹🍋

All my kitchen gear is currently stuck in Rome… so we’re winging it, Amalfi style! 🤌

Luckily, shopping from the fabulous little local stores makes improvising pretty easy.

Today’s picnic-style lunch — N’duja pasta salad, delicious local ham, fresh mozzarella, tomato salsa & crispy crostini.

The mint garnish? Picked on my walk to the kitchen this morning 🌿

Simple. Local. Delicious.

What’s not to love? 🇮🇹❤️

Ciao, splendida Ravello! 🇮🇹🍋✨

The next six days will be filled with gorgeous Italian food, breathtaking views, maybe a little limoncello… and definitely LOTS of stairs! 😅

Canapés & finger food for 100 guests tonight! 🥂✨
