Single origin Indonesian chocolate from Chocolat Nicolas Berger paired with a single origin Indian tea from Camellia Sinensis | Thé • Tea

A namelaka lighter than a ganache, aerated chocolate, a tea jelly, and buttermilk to keep it clean and fresh.

Light, fruity and clean. A chocolate dessert that still works in summer.

Developed by our head chef Adam Tooby-Desmond and pastry chef m_camillaa , it started with two tastings, a chocolate and a tea.

Sweet, crisp and beautifully balanced. A cocktail made to be enjoyed slowly at the bar.

Built around The Glenrothes 15 Year Old Single Malt, Ume & Shō brings together the distinctive flavours of Speyside and Japan in one glass.

The cocktail balances the whisky’s rich fruit and warm spice with the gentle sweetness of Japanese plum sake. A touch of absinthe and aromatic bitters adds freshness, structure and a clean finish.

Named after the Japanese word ume (plum) and the shō, a traditional Japanese reed instrument, it celebrates the meeting of two distinctive traditions in one balanced serve.

Whisky gelato, brioche and candied pecans.

A summer expression of The Glenrothes 15.

The dessert takes its shape from the Sicilian tradition of brioche and gelato, then follows the whisky into orange, candied citrus and caramelised pecans.

Soft brioche, cold whisky gelato, citrus and nuts.

Trivet Tasting Club - Sherry & Andalucia - Friday 22 May 7pm

From the chalk-white albariza soils of Jerez to the historic solera cellars of southern Spain, the wines of Andalucia remain some of the wine world’s most singular expressions of place.

For this Trivet Tasting Club, will explore the diversity of the region through a selection of fortified and still wines — from delicate biologically aged styles to deeper oxidative expressions alongside vibrant whites and reds from across southern Spain.

Throughout the evening, will serve a selection of tapas-style dishes inspired by the region and designed to accompany the wines being poured.
