2nd anniversary.
My return to Japan in July was an experience I'd never had before.
In addition to the restaurants I'd studied at during previous trips, I was fortunate that through my connections with other chefs I was able to study at new restaurants.
While my teacher, YouTube, only teaches me through sight and hearing, my annual return to Japan allows me to learn with all five senses (taste, sight, smell, hearing, and touch), making it the most important experience for a chef. This year I was able to devote a lot of time to studying. And my mind is full of inspiration.
Sushi Nakamura will embody my Japan even more deeply.
The lifeblood of Sushi Nakamura is the finest Japanese rice and our sushi rice, seasoned with our original sushi vinegar, a blend of red vinegar, rice vinegar, and salt. We also use fresh British ingredients and prepare them using traditional Japanese methods to maximise their flavour and potential, allowing everyone to enjoy the true taste of the ingredients.
Sushi Nakamura's sushi is truly the sushi I ate in my hometown of Kitakyushu, with my own touch added. My measuring stick is always Japan. I am always thinking about whether my sushi, and the entire Sushi Nakamura restaurant, can be accepted in Japan.
2nd anniversary today.
Thanks to all of you, we were able to celebrate our 2nd anniversary today, September 22nd. We would like to express our sincere gratitude for this, as it is a result of your patronage and your appreciation of our work.
We are looking forward to this year having lots of exciting growth and change. Never forgetting the goals we set when we launched HanaMatsuri nine years ago, all of our staff will continue to strive with a desire to improve, aiming even higher. We sincerely hope for your continued patronage and support over the next two years.
