Dear costumer. Next week we will be closed for 1 week holiday from Monday to Friday. However, we will be open on Saturday 2nd. I will be heading of to Costa Rica - this time not only for coffee - but for the love for coffee. As this amazing coffee-woman/producer swiped my legs away. It seems that speciality coffee isn’t so special anymore. It had reached a level whatever you do “it’s speciality”. So what is next. There is no next. Because no-matter how hard you try. It’s the result that ends in your cup - that reveals your hard work. Now a days it’s not enough to shake the farmers hand, showing you have been there with multiple pictures. You also have to do the work for both to understand why. So that reveals how. A transparent model - you know how …. Because you worked hand in hand with the farmer. You cannot change bad coffee into something good and neither bad qualities. Tools, equipment, additives is just helping tools. When you know you know. And then you know you don’t need all these tools which sometimes makes it so complicated to brew a good coffee. Dose, grind, brew - repeat until you have tried so many you forgot. And then you repeat again. Every sportsman and woman know this. That’s why I have many who do sports on a high level drinking coffee. Because they know you know…. Right ❤️
