The Night Baker is from the cookie-loving minds of Toronto baking duo Mitch and Leanne. Chemists turned night-time bakers and food lovers through and through. We make new recipes based on things we like to eat, things we grew up with and our experiences from travelling in wonderful places with delicious foods. But mostly we just love eating cookies and sharing them with you all to enjoy.

The Night Baker's Desserts Sept 22 - Oct 4 🌙

Happy Mid-Autumn Festival!

This week's menu include cookies we have every year to celebrate the Mid-Autumn Festival.

First is our Mooncookie, our homage to our favourite double-yoked Mooncakes 🥮 We make our own salted egg yolk filling that's not too sweet and pairs perfectly with our black sesame cookie. We use black sesame to symbolize the moon in the night sky and decorate with gold paint for good fortune.

Next is our Pineapple Bun which is inspired by 2 desserts, the Pineapple Bun and Pineapple Cake. The Pineapple Cake is a dessert that symbolizes prosperity. Although not traditionally eaten during the Mid-Autumn Festival like the Mooncake, it is still a dessert often gifted year round 🍍

We also have not 1, but 2 NEW COOKIES for our current secret menu! They are the Coffee Toffee Mochi that's stuffed with our housemade coffee mochi and the Afternoon Tea, made with a steeped black tea glaze. Both perfect desserts for the fall 🍂

We also just restocked The FIRST Premium Silvanas & Sans Rival Bakery in Canada Silvanas at both bakeries along with our very popular Ube Cake Cups. And because they're still popular even with the cooler weather, we're still serving Halo-halo's for a little bit longer 🇵🇭

This week we're also celebrating our Danforth bakery's 5th birthday. We're having a special giveaway sometime soon to celebrate stay tuned! 🥳🥳🥳🥳🥳

Hi friends! We are having special hours today to have an end of summer party with our teams to thank them for our many successes including a very busy summer (tysm!) ☺️

Both of our bakeries will open early and close early at 10am-5pm. Hours are already updated on Google as well where we keep our hours always up to date.

Next week Sunday September 27 we are also celebrating our Danforth bakery's 5th birthday. Planning to do a special giveaway for the day so stay tuned 🥳

It is with no exaggeration that this was probably one of our busiest summers ever. Ever ever. As in!

From our pop-ups in Scarborough, Mel Lastman Square, downtown Toronto, to the return of the Taste of the Danforth and then the recently concluded Philippines Festival Mississauga.

From the countless Halo-halo's, Tito Parley's Silvanas, Death in Venice Gelato scoops, Ube cakes, Ube cake cups to of course our cookies.

This weekend alone, we baked THOUSANDS of cookies, had never ending lineups all weekend long and sold out early each day for cookies and Tito Parley's Silvanas at our Mississauga pop-up.

Just wow. Thank you!

To our wonderful hardworking teams at The Night Baker, we are truly grateful for your support everyday. Thank you for spending the long hours making our cookies and cakes and being there for us, our customers and our bakery.

To our partners Chermaine and Parley of Tito Parley's, it is so wonderful to have friends be there with you through the thick of this crazy small business life we have chosen for ourselves. Your Silvanas are amazing and having you both as our friends is a blessing.

And to all of you, our dearest cookie monsters who have continued to support us through many many years. I personally met so many of you through the summer and I'm always filled with so much joy whenever I see people enjoy what we make.

I've seen and heard so many people showing their fervent support for us, our cakes and our cookies and sharing their love to their friends and family. It leaves me speechless to know this kind of love exists for our bakery and we are beyond grateful. Wala talaga akong masabi.

Got so busy yesterday I think we had a lineup for 3 hours straight 😳😱😱

Also amazing to see Jericho Rosales perform in person. Wow, pogi na, mabait, magaling pa kumanta. (Handsome, kind and a great singer.) What can't he do?? Salamat Echo!

The Night Baker's Desserts September 8-20 🇵🇭

To start off September, we're bringing back some of our most popular Filipino inspired cookies in celebration of the 15th anniversary of Philfest Mississauga on Sept 11-13 at Celebration Square.

These are some of our most creative cookies that showcase the depth of Filipino desserts that maybe non-Filipinos have not heard of before.

From cheese custards, cashew creams, tsokolate (chocolate) and Ube Mascarpone, all 4 cookies on our current "Secret Menu" have special fillings we make in-house that are just delicious. Masarap!

We'll be bringing these and our famous Ooh bae cookies amd Tito Parley's Silvanas to Philfest at Celebration Square in Mississauga on Friday-Sunday Sept 11-13.

We've also just restocked The FIRST Premium Silvanas & Sans Rival Bakery in Canada Silvanas at our North York bakery and will be restocking our Danforth bakery soon. We will have the Ube Latte, Yema and Pistachio Silvanas available.
