The Night Baker is from the cookie-loving minds of Toronto baking duo Mitch and Leanne. Chemists turned night-time bakers and food lovers through and through. We make new recipes based on things we like to eat, things we grew up with and our experiences from travelling in wonderful places with delicious foods. But mostly we just love eating cookies and sharing them with you all to enjoy.

The Night Baker's Desserts July 14-26 🌞

We got another NEW cookie joining our menu this week the Chocolate Banana or simply, Choconana! 🍫🍌

When we think of new recipes and flavour combinations, it always boils down to one question, what tastes good? Chocolate with banana has always been a good classic combination for us and I don't think anyone has done a chocolate banana cookie yet so hey, why not?

Our NEW Choconana cookie is made with a chocolate banana cookie dough, sprinkled in with skor toffee bits AND chocolate chips and then topped with Banana chips from the Philippines.

Think Chocolate Banana Bread. Delicious πŸ₯°

As for our other desserts, Halo-halo's have been very popular lately because of the heat (tysm!) and we have them available at all our bakeries all summer long.

We have just restocked THE BEST Silvanas from The FIRST Premium Silvanas & Sans Rival Bakery in Canada at all our bakeries. They do go by fast so please come and enjoy them when you can!

Our Ube Cake Cups are becoming elusive but have just been restocked at our College bakery. We only make a limited amount of cups every week and if we sell-out, we sell-out. We are looking to get them restocked at Danforth and North York by Friday.

We will be bringing THE BEST SILVANAS from Tito Parley's and a selection of our cookies freshly baked everyday, including our famous Ooh bae cookies πŸ’œ

We will be joined by other local Asian owned businesses for lots of food, treats and entertainment all weekend long.

Been getting a lot of messages about our dessert inventory for the weekend so just wanted to share this update about our stock.

Ube Cake Cups and Silvanas from The FIRST Premium Silvanas & Sans Rival Bakery in Canada have been very popular again and they already sold out at our bakeries sorry about that! Will try to get them restocked soon.

Our College bakery just made a fresh batch of Ube Cake Cups and will have them available this by Saturday. Other locations will hopefully have them stocked by Friday next week πŸ’œ

We also got a lot more cake orders this week than expected and sold out of them pretty early. We will have them available for pre-orders again on Sunday for pickup next Saturday. Tysm to everyone who ordered and we hope you all enjoy our cakes! πŸŽ‚

Had a bit of a mixup with our flavour descriptions before for Nanaimo sorry, it was early in the morning πŸ˜…

Our Nanaimo Cheesecake cookies are another Night Baker original. We first made them from the original Nanaimo bar recipe from the City of Nanaimo itself and then transformed it into our own recipe in cookie form.

Instead of a purely buttery cream base, we instead use our own vanilla cheesecake filling to give the cookie more of a sweetness balance but still has the deliciousness of Nanaimo bars through and through.

Our Halo-halo's have been very popular at all our bakeries especially with this heat wave. They're a one of a kind Filipino shaved ice dessert made special with my Lola's Leche Flan and Ube Pie Gelato from our friends Death In Venice Gelato πŸ’œπŸ¦

Happy Canada Day! This week, we have our Canada Day specials available at all our bakeries which include our original Nanaimo Cheesecake cookie and our NEW Maple Pecan cookie. The Maple Pecan is a maple syrup infused cookie, sprinkled in with pecans and then stuffed with a maple cream filling. Think pancake cookie with maple syrup and pecans. Yummy!

We've just restocked our very popular Ube Cake Cups made with real Ube from the Philippines. We're always trying to improve stocking these regularly and hoping to do so every Friday. They are πŸ’œ

We've also just restocked THE BEST SILVANAS from The FIRST Premium Silvanas & Sans Rival Bakery in Canada at all our bakeries. These go by really fast whenever we do a restock so we hope you can enjoy them while you can!

Father's day weekend in photos.

Worked very long hours. Got very tired. No Father's Day celebration but ended up celebrating the week after.

What I couldn't fit here was how appreciative me and Leanne are of our teams.

The day of Father's day, someone called in sick and still had to work more hours with little sleep. Yes I was very tired but I also wanted to be there for our team. They do so much for us so I thought it was good for me to be there for them too when they needed me. I consider myself the bakery's dad so maybe very apt for me to be there for the team to lean on for Father's day, just like any great dad would.

And the week after, the only reason we could step away for a bit was because of our teams. They are amazing and the bakery is in good hands with them.

It's been about 1 month since we got featured on Global News and I just wanted to take this opportunity to thank everyone for their support. Our story was shared thousands and thousands of times and had over a million views in just a few days 🀯

Thank you again to Lexy and Global News for sharing our story. Thank you to everyone from around the world sending us their well wishes, especially our fellow Filipinos. We got so many messages from people all over Canada, the US, Europe, Australia and of course the Philippines telling us how proud they were of us. I still don't know if we deserve all the nice words and attention but we are so very grateful and appreciative of every one of you.
