One of our frequently asked questions from customers is: " What is Red Fife?"
Our answer:" It is a heritage grain and Canada's oldest wheat."
The modern hard red spring wheat of today, which is planted Canada wide and exported, was parented by Red Fife. It came to Canada from Ukraine, via Scotland, back in the 1840s and has an amazing history. Today, it is making a comeback with bakers. And it should. This special wheat has a natural sweetness paired with subtle undertones of earth, and has the same qualities as the modern hard red spring wheat. At Peace Country Milling, we sell it as kernels or a finely milled wholegrain flour. We also grind it in our granite stonemill, then sift it into a light and soft flour, perfect to use in place of all-purpose flour.
