From our friends in McLaren Vale comes the Nero Diavola 2023 - juicy and full of character. Think black cherry, sweet red earth, and a hint of clove.

We love it paired with our overnight Fleurieu lamb shoulder, smoked hummus, pomegranate harissa, and sumac onions - smokey and tangy, just like the wine itself.

A match made in flavour heaven, celebrating the best of local produce. Cheers!

Joel Tisato // Guest Chef for FIRE + STONE

Joel began his cheffing journey at Press Food and Wine in 2014, learning from our own Will Doak. He honed his skills at the famed London Chiltern Firehouse under Nuno Mendes. Returning to Adelaide he became Sous chef at Africola and Head Chef of Africola Canteen.
Today, Joel has found his home at Orso as Head Chef. The modern European fare at Orso allows Joel to blend his Northern Italian heritage with influences from his time in London and Africola.

We asked Joel about winter…
“My favourite winter memory would be spending Christmas in Noventa, Padova (my father’s family home town). There was family, fire, snow, singing and more food than suitable for consumption.

My favourite thing to cook (and eat) on a cold stormy night would have to be the coveted recipes of my dear Nonna Mari. Her Minestra de Fasoi or Ragu alla Bolognese on polenta.”
