Curiosity often begins with something we think we already know.

We know the sweet potato for its root. But its leaves are edible too — and have long been part of the culinary tradition in different parts of Latin America.

Some ingredients not only feed us, they tell us where we come from. 🌽

Huitlacoche is a fungus that grows naturally on corn. Often called “the truffle of Mexico,” it has been part of Mesoamerican food culture for centuries, long before European contact — deeply connected to corn, the land and the people who cultivate it.
Today, it also grows here in Austria.
We are incredibly grateful to our farmers for their curiosity and dedication.
Through their work, ingredients rooted in Latin American cultures can grow in Austrian soil — allowing us to create the kind of cooking we believe in at Z’SOM.

AZAFRÁN x ZSOM 29. & 30. July 2026

🇦🇷 From Mendoza to Vienna: we are thrilled to welcome Chef Sebastián Weigandt from the Michelin-starred restaurant Azafrán in Mendoza, Argentina for our next edition of AMIGOS LATINOS.

With Azafrán, Sebastián, who is recognized by The Best Chef Awards, has established one of the most exciting culinary destinations in Argentina, earning one Michelin Star and a place among Latin America’s 100 Best Restaurants.

His cuisine is deeply rooted in the landscape of Mendoza: the Andes, open-fire cooking, local producers, mountain herbs, and the w**es that have made the region famous around the world. Sebastián has a remarkable ability to transform these influences into dishes that feel elegant while delivering incredible depth and intensity.

Sebastián and Diego will create a unique menu together that reflects the landscapes and stories that have shaped them. While both chefs share a deep respect for local products, traditional knowledge, and contemporary technique, they approach these ideas through different territories of Latin America. The result will be a true four-hands dinner — a dialogue between Chile and Argentina, between the Andes of Mendoza and the flavors of Diego’s own culinary journey.

🍷 For this edition of Amigos Latinos, we will not only explore Mendoza through food, but also through w**e.
Our entire w**e pairing will focus on Alpamanta, one of Mendoza’s most respected biodynamic w**eries. Located in the foothills of the Andes in Luján de Cuyo, Alpamanta works organically and biodynamically, producing w**es that express the purity, altitude, and energy of their terroir.

Ask a Peruvian and... well, the answer is obvious, too.

The Pisco Sour has been fuelling one of Latin America’s longest-running debates for generations. Both countries proudly claim it as their own, both produce Pisco — a grape spirit distilled from w**e — and both will happily tell you theirs is the original.

Our chef is Chilean. Our sous chef is Peruvian. We stopped trying to settle the debate a long time ago.

What we can agree on is that a great Pisco Sour is the perfect way to begin an evening.

Latin American cuisine is a story of encounters.
Of ingredients, traditions and people crossing paths, influencing one another, and creating something new.

We invite you to explore this idea through our current fish course, served in two parts:
* Shumai | Meager Fish | Pachikay | Chayote
* Grilled Meager Fish | Pil Pil of Oca Tucupí | Huacatay | Oxalis

The first part is inspired by Chifa cuisine, born from the meeting of Chinese and Peruvian cultures.
The second takes you from the Amazon to the Andes, exploring the depth of fermentation, herbal freshness, and a product-driven approach shaped by Spanish culinary traditions.
It is a journey through landscapes, histories and flavors and a reminder that some of the most exciting things happen when cultures come together.

This July, we are incredibly excited to welcome Chef Marsia Taha Mohamed from Arami in La Paz, Bolivia, to Z’SOM for three nights only.

Named Latin America’s Best Female Chef, featured in the LATAM 50 BEST list (No. 48) and recognized by The Best Chef Awards, Marsia has become internationally known for her deeply personal approach to Bolivian cuisine.

At Arami, she works closely with indigenous communities, native ingredients and ancestral knowledge systems — bringing the immense biodiversity of Bolivia, from the Amazon to the Andes, into a cuisine that feels emotional, precise and full of identity.

Together with Diego, she will create an exclusive tasting menu where Bolivian biodiversity meets Z’SOM’s flavor-driven cuisine — moving between herbs, smoke, fermentation, acidity and fire, while exploring the connection between memory, product and modern Latin American cooking.
