Peppercorn Steak with Creamy Sauce
Ingredients:
- 4 filet mignon steaks, approximately 1.5 inches thick
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 3 tablespoons whole peppercorns, crushed
- 1/4 cup brandy or cognac
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Fresh parsley, chopped for garnish
Directions:
1. Season the Steaks:Generously season both sides of the steaks with salt and crushed peppercorns.
2. Cook the Steaks: Heat the olive oil in a large skillet over medium-high heat. Add the steaks and cook for 4-5 minutes per side, depending on your desired level of doneness. Transfer the steaks to a plate and keep them covered to retain warmth.
3. Deglaze the Pan: Pour brandy or cognac into the skillet, scraping the browned bits from the bottom of the pan. Be cautious, as the alcohol may flame up.
4. Prepare the Sauce: Reduce the heat to medium. Add the heavy cream, Dijon mustard, and Worcestershire sauce to the pan. Stir and cook for 5-6 minutes, allowing the sauce to thicken slightly.
5. Combine the Steaks and Sauce: Return the steaks to the skillet, spooning the creamy sauce over them. Let the steaks cook in the sauce for about 1 minute to let the flavors blend.
6. Serve: Plate the steaks, drizzle with the creamy peppercorn sauce, and garnish with freshly chopped parsley.
