🍗 DIRTY SKILLET BEER BBQ CHICKEN THIGHS

🛒 Ingredients

6 chicken thighs (skin-on)
Salt & black pepper
1 tbsp oil

---

🍺 Beer BBQ Glaze

1 cup beer (lager or amber)
½ cup BBQ sauce
2 tbsp brown sugar
1 tbsp soy sauce
1 tsp smoked paprika
1 tsp garlic powder

---

👨‍🍳 Instructions

1️⃣ Season the chicken

Salt + pepper both sides

---

2️⃣ Sear

Hot skillet
Oil + chicken (skin-side down)
Cook until crispy and golden

Flip and cook another 3–4 minutes

---

3️⃣ Make the glaze

In same pan:

Add beer → simmer 2–3 mins
Add BBQ sauce + sugar + spices

Let it reduce slightly

---

4️⃣ Coat & cook

Add chicken back
Spoon glaze over constantly

Let it get sticky, glossy, and caramelised

---

Let the sauce reduce properly.

Yes… you read that right.

Juicy smash burger
Stuffed with sliced steak
Loaded with beer cheese
Crispy bacon
Toasted brioche

This is NOT a burger…
This is a problem 😏

🛒 Ingredients

500g ground beef
200g steak (cooked & sliced)
4 slices cheddar
4 strips crispy bacon
2 brioche buns
Salt & pepper

🧀 Beer Cheese Sauce

½ cup beer
1 cup grated cheddar
1 tbsp butter
1 tbsp flour
1 cup milk

---

👨‍🍳 Instructions

1️⃣ Make the beer cheese

Melt butter, add flour.

Whisk in milk + beer.

Add cheese and stir until smooth.

---

2️⃣ Cook the steak

Quick sear, slice thin.

---

3️⃣ Build the madness

Flatten 2 beef portions.

Layer steak + cheese inside.

Seal with another beef layer.

Form into a thick stuffed patty.

4️⃣ Cook

Hot skillet.

Cook slow enough to melt inside, fast enough to keep juicy.

Flip once.

---

5️⃣ Build

Bottom bun
Stuffed burger
Beer cheese drizzle
Bacon
Top bun

Loaded beer cheese sauce
Caramelised onions
Toasted roll

🛒 Ingredients

400g sirloin or ribeye (thinly sliced)
Salt & black pepper
1 tbsp oil
1 onion (sliced)
1 hoagie roll / fresh bread roll
Butter (for toasting)

---

🧀 Beer Cheese Sauce

1 tbsp butter
1 tbsp flour
1 cup milk
½ cup beer (lager works best)
1 cup grated cheddar
½ tsp garlic powder
Salt to taste

---

👨‍🍳 Instructions

1️⃣ Make the beer cheese

Melt butter in a pan.

Add flour and cook for 1 minute.

Slowly whisk in milk, then beer.

Simmer until slightly thick.

Add cheese, garlic powder, salt.

Stir until smooth, creamy, and loaded.

2️⃣ Cook the onions

In the same pan, cook sliced onions low and slow until caramelised.

Set aside.

---

3️⃣ Cook the steak

Heat skillet until hot.

Add oil, then steak.

Season with salt & pepper.

Cook fast — about 1–2 minutes (don’t overcook).

4️⃣ Toast the roll

Butter and toast until golden.

---

5️⃣ Build it dirty

Bottom roll
Steak
Caramelised onions
Heavy pour of beer cheese
Top roll

(Optional: extra cheese drizzle on top 😏)

🛒 Ingredients

500g ground beef (80/20)
Salt & black pepper
4 slices cheddar cheese
4 strips crispy bacon
2 brioche buns
Butter (for toasting)

---

Beer Bacon Jam

150g bacon (chopped)
1 onion (thinly sliced)
1 tbsp brown sugar
½ cup dark beer
1 tbsp balsamic vinegar

---

Dirty Sauce

½ cup mayonnaise
1 tbsp mustard
1 tbsp ketchup
1 tsp smoked paprika
Splash pickle juice

---

👨‍🍳 Instructions

1️⃣ Make the beer bacon jam

Cook chopped bacon until crispy.

Add sliced onion and cook until soft and caramelised.

Add brown sugar, beer, and balsamic vinegar.

Simmer for 10–15 minutes until thick and jammy.

Set aside.

---

2️⃣ Prepare the patties

Divide beef into 4 loose balls.

Do not overwork the meat.

Season with salt and pepper.

---

3️⃣ Smash burger time

Heat a cast iron skillet until smoking hot.

Place beef ball in skillet and smash flat.

Cook for 2 minutes until crispy edges form.

Flip and immediately add cheese.

Cook another 1 minute.

4️⃣ Toast the buns

Butter brioche buns and toast until golden.

---

5️⃣ Build the burger

Bottom bun
Dirty sauce
Smash patty
Beer bacon jam
Second patty
Crispy bacon
More sauce
Top bun

Juicy ribeye steak
Garlic butter
Fresh rosemary
Finished with a splash of beer in a hot cast-iron skillet.

Simple.
Rustic.
Ridiculously good.

Salt
Black pepper

Pat the steaks dry.

Season generously with salt and black pepper.

Let them rest for 10–15 minutes.

Heat a cast-iron skillet until very hot.

Add olive oil.

3️⃣ Sear the steak

Place the steak into the skillet.

Cook for 3–4 minutes per side until a deep crust forms.

4️⃣ Add flavour

Add butter, garlic, and rosemary.

Tilt the pan and spoon the garlic butter over the steak for about 1 minute.

5️⃣ Beer finish

Pour in ½ cup beer.

Let it bubble for about 1 minute to create a rich skillet sauce.

6️⃣ Rest

Remove the steak and let it rest for 5 minutes before slicing.

🍟 Dirty Skillet Loaded Fries Recipe

Serves

2–3 people

---

🛒 Ingredients

Fries

500g frozen fries (or fresh cut potatoes)

Vegetable oil (for frying)

Salt

Beer Cheese Sauce

2 tbsp butter

2 tbsp flour

1 cup milk

½ cup lager beer

1½ cups cheddar cheese (grated)

½ tsp smoked paprika

Salt & pepper

Dirty Sauce

½ cup mayonnaise

1 tbsp mustard

1 tbsp ketchup

1 tsp smoked paprika

Splash pickle juice

Toppings

150g crispy bacon bits

Chopped spring onion (optional)

👨‍🍳 Instructions

1️⃣ Double Cook the Fries

For proper crispy fries:

Fry the fries at 160°C for 4–5 minutes.
Remove and let them rest.

Fry again at 190°C for 2–3 minutes until golden and crispy.

Season with salt.

2️⃣ Make the Beer Cheese Sauce

Melt butter in a saucepan.

Add flour and cook for 1 minute.

Slowly whisk in:

milk

beer

Simmer until thick.

Add grated cheddar and stir until melted.

Season with paprika, salt and pepper.

3️⃣ Make the Dirty Sauce

Mix together:

mayo

mustard

ketchup

smoked paprika

pickle juice

Stir until smooth.

4️⃣ Assemble the Dirty Skillet Fries

Place fries in a hot cast iron skillet.

Top with:

Beer cheese sauce
Crispy bacon bits
Dirty sauce drizzle
Spring onions

Serve immediately.

For maximum flavour:

Cook the bacon in the same skillet you serve the fries in.

That bacon fat flavour makes a huge difference.

A New Chapter 🔥

Over the past few months, life changed in ways I never expected.

After my motorbike accident, I nearly lost my life… and I did lose my leg.

Moments like that force you to stop and ask yourself a real question:

What dream would I regret not chasing?

For me, the answer has always been food.

Cooking. Comfort meals. Rustic dishes. The kind of food that brings people together around a table.

This page started as Al Dente Gourmet Catering, and I’m incredibly grateful for every single person who supported it.

But after everything that happened, I realised it was time to finally pursue the bigger dream my wife and I have talked about for years.

So this page is evolving into something new:

🔥 Dirty Skillet – DS☆Works

Same passion.
Same love for hearty comfort food.
Just a bigger dream behind it.

My initials are D.S.
My wife’s initials are B.S.

This new chapter is about building something real together — a food brand that could one day grow into pop-ups, a food truck, or maybe even a rustic pub.
