A kiddies menu will also be available on the day, so no one’s left out.

Behind the Bottle: Baccō Wines at Mill St Bistro 🍷

Our next Winemaker’s Dinner features a producer whose approach to winemaking echoes much of what we value at Mill St: patience, precision, and deep respect for both tradition and innovation.

Baccō is the vision of Nathan Jankelowitz—an ode to the artistry of Super Tuscan wines, reimagined for South African soil. Their wines are guided by a mindful, unhurried philosophy that values quality over speed and complexity over excess. Each bottle tells a story of time, place, and the people who shaped it.

Leading the charge is winemaker Julia Blaine, whose quiet confidence and minimal-intervention approach allow the vineyard to speak first. “Wine is made in the vineyard,” she says, “and when it’s done right, it can transport you.”

On 26 June, join us for an evening of food, wine, and conversation—where every pour has a place, and every plate is made to match.

What to expect:
🍷 A 4-course set menu by Chef Phil
🍷 5 wine pairings featuring Baccō Wines
🍷 Insights from winemaker Julia Blaine on her process, philosophy, and what makes these wines age-worthy and expressive

Event Details:
Date: 26 June 2025
Price: R995 per person
Location: Mill St Bistro

Spaces are limited. Bookings essential—secure your seat via the link in our bio or visit our website.

The Return of the Oyster 🦪

Back on the menu and ready to open every meal with a splash—oysters have returned to the starter section at Mill St Bistro.

We’re serving up fresh Saldanha Bay oysters, proudly sourced from

You’ll find them two ways:

🧊 Fresh – Served on ice with lemon wedges and a classic mignonette (a vinegar-based shallot dressing that brings brightness and acidity to each bite).

🔥 Rockefeller – A warm, indulgent take: oysters baked with herbs and a savoury butter crumb for richness that still lets the oyster shine.

One crisp, one comforting—both unapologetically bistro.

📍 Available on our à la carte menu. Book via the link in our bio and start with something special.

Our Phil-osophy 🍽️

At Mill St Bistro, the heart of the kitchen beats with Chef Phil’s approach: ethical, unfussy, and deeply considered.

Despite a career opening restaurants for some of the biggest names in the culinary world, Phil is first and foremost a cook—and a teacher. Always ready to share knowledge, answer questions, and spark a laugh along the way, he brings a sense of ease and purpose to everything he does.

His philosophy is simple: respect the ingredients, respect the process, and never lose sight of flavour. “Make it delicious, keep it simple, and follow the seasons,” Phil says. “If you do that, you can’t go far wrong.”

No unnecessary frills. No overworked plating. Just honest food, made with skill and intention.

Whether it's a wood-fired flatbread, a perfectly cooked steak on the fire, or crispy beer-battered onion rings—everything you see on the plate is there for a reason.

Because great food doesn’t need to shout. It just needs to be real.

Private Dining at Mill St Bistro 🍷

Some occasions deserve a little extra space—and a table where you can slow down, share good food, and raise a glass.

At Mill St Bistro, we offer two ways to make your gathering feel a little more personal: – Our private dining table, seating 8–10 guests, set slightly apart from the main dining room. – Or, for something bigger, you can book the entire bistro for exclusive use.

Each event is built around a seasonal, custom-designed menu and thoughtful wine pairings—always grounded in the same approach to honest, flavour-driven food you’ll find on our menus.

Perfect for team lunches, family celebrations, milestone birthdays, or just bringing good company together.

The Art of Getting It Just Right 📚

At Mill St Bistro, menus aren’t rushed. They’re built slowly—layer by layer, idea by idea.

You’ll notice it the moment you walk in. Shelves lined with cookbooks—classics, forgotten gems, and trusted favourites. These aren’t just for show. They set the scene for what we do here: drawing on tradition, learning from the past, and letting those ideas spark something new.

“When I’m working on a new menu or dish, it always starts with the produce—what’s in season, what’s coming in. There are new ingredients appearing in South Africa that I haven’t necessarily seen before, and that’s always exciting. My go-to cookbooks are the classics: Le Gavroche, Thomas Keller’s French Laundry and Bouchon, and of course the reference books like Larousse Gastronomique and Le Répertoire de la Cuisine—over 100 years old and still completely relevant today. When you’re unsure of something as a chef, those are the books you turn to.” – Chef Phil

Because to us, a menu isn’t just a list of dishes—it’s a reflection of the season, the craft, and the work behind every plate.

We’ve just launched our new menu, and we’d love for you to come and experience it.

📍 Book your table via the link on our website and taste what’s next.

A Moment for the Mothers 🌸

Today, we raise a glass to the women who shape our lives—those who inspire, nurture, and show up in all the ways that matter.

As Chef Phil says:
“Mother’s Day is one of my favourite days of the year—a chance to celebrate your mum, who for me, has always been the boss of the family. And now that I’m a dad myself, it’s really special to watch my kids celebrate their mum too.”

Wherever you are, and however you’re celebrating, we hope it’s a day filled with good food, laughter, and the people who feel like home.

Happy Mother’s Day from all of us at Mill St Bistro.

If you're joining us today, we’d love to see your moments—tag us

Fermented Chilli Mussels & Toasted Baguette 🌶️🥖

We start with Saldanha Bay mussels sourced from Southern Cross Seafood—sustainably sourced and selected for their freshness and flavour.

They’re gently simmered in a sauce made from house-fermented chilli and our own slow-cooked chicken stock, then finished with butter and cream for just the right touch of richness.

To mop up every last spoonful? A slice of toasted baguette, baked fresh each morning by our neighbours at @‌motherdough1919 in Stellenbosch.

Bold. Warming. Unapologetically flavourful.

📽️ Keep an eye out for this month’s Made From Scratch with Chef Phil reel—where Chef Phil shows you how we make our fermented chilli from scratch, step by step.

📍 Available on our à la carte lunch menu. Book your table via the link in our bio.

Something’s Simmering… 🔥

There’s something new on the horizon at Mill St Bistro—a refreshed menu built on the same principles that guide everything we do: seasonal produce, bold bistro flavours, and food that’s honest, generous, and thoughtfully prepared.

But before that arrives, there’s still time to enjoy the dishes that have brought people back to the table, time and again.

If there’s a dish you’ve been meaning to try—or one you already love—now’s the time.

📍 Our new menu goes live this Thursday. Until then, book your table via the link in our bio and enjoy the best of what’s on now.
