Pinch of salt, white pepper, and nutmeg if you have it
Optional: 2 tbsp grated cheddar or parmesan for extra flavor

Steam or boil green beans until tender-crisp, drain well.
In a small pan, melt margarine on low heat. Add flour and stir 30 sec to make a roux – it should look pasty, not browned.
Slowly pour in milk while whisking to avoid lumps. Cook 1-2 mins until it thickens slightly.
Stir in salt, pepper, tiny pinch of nutmeg. Simmer 1 min.
Add green beans, toss to coat. Stir in cheese at the end if you like, off heat. Mushrooms are optional.
