Did you know Kleftiko translates to "stolen meat"? Historically, the Klephts (anti-Ottoman insurgents) would slow-cook meat in sealed underground pits to keep smoke from giving away their location.

Today, we recreate that legendary tenderness in our kitchen, baking the lamb slowly in parchment paper with potatoes and herbs until it is melt-in-your-mouth juicy.
