Chilly morning means there's a warm and cosy soup lined up for tonight's supper.
Here's what you will need:
2 medium carrots, peeled and chopped
1/2 small onion, chopped
1/2 teaspoon ground cumin
1 medium diced tomatoes
1 medium grated potatoe
1 cup dried red lentils
1/4 teaspoon salt
1/8 teaspoon ground black pepper
500g baby spinach
Method
In medium sized pot, heat the pot until hot, then add a little warm water. Add carrots and onion, and cook 6 to 8 minutes or until tender. Stir in cumin; cook 1 minute. Add potatoes, these should cook for about 8 minutes in just enough water to allow them not to burn. Add tomatoes, lentils, 2 cups water, salt, and pepper; cover and heat to boiling on high. Reduce heat to low and simmer, covered, 8 to 10 minutes or until lentils are tender. Stir in spinach.
