Another group to join on that day was my ever faithful Sunday Lunch customer, my little Chinese friend, Joshua who always brings his friends to eat in the garden. They all work for Hauwei. Everyone loved my cocktails and home made iced tea. Once the tables were removed during the rain, we danced as if no one was watching---such fun !!. You all add a very special colour to my life and I thank you.

As promised here is the cooked bird in all her glory. The breast and thighs having been protected by the bacon layer that is now well browned and crispy. You can either offer this to hovering family members to pick on or cut it up to be served with the stuffing. After carving up the turkey and the stuffing pour over a generous dollop of homemade fresh cranberry and date sauce. Don't forget to cook a little extra to serve on the side.

Select a smaller, young turkey to ensure a tender bird and for those who need it, you can get halal and kosher turkeys so look out for the sign. Cut the two glands off the popes nose like you do with a chicken. Wash inside and out with coarse salt and remove the red button and pat dry.

A most amazing day was enjoyed by about 35 of us in my garden on Sunday 25th November. Not even the rain could spoil the mood and most felt that it was showers of blessings. Before I post pictures of the day I need to bless you with a "How to stuff a turkey" video so that you can buy one before they get sold out. Prepare stuffing using fruit, nuts, citrus, mince, giblets and herbs.
