Bagels for days Sunday is baking day and I can happily say I’ve perfected the bagel recipe after a good couple attempts here they are delicious goodness filled with cream cheese , basil pesto fresh baby lettuce leaves 🥬 gypsy ham and smashed avocado 🥑 yes bagels 🥯 homemade goodness

Homemade Amaretti Biscuits
So this was the first time I’ve made Amaretti biscuits and they came out perfect 👌 just a little proud of myself I chose the soft and chewy variation and for this particular soft and chewy texture you will need to whip the eggs whites to soft peaks , and fold through the almond flour

Ingredients
3 egg whites
1 1/4 cup granulated sugar fine
1tsp vanilla extract
1tsp almond extract
2 1/2 cups almond flour fine

* whip egg whites slowly add sugar a little at a time whip till stiff peak add vanilla extract and almond extract
* Fold egg whites into almond flour until completely combined
* Ball mixture using hands into the perfect size coffee biscuit before you bake coat each biscuit in a mix of icing sugar and caster sugar
* Bake for 10 minutes at 200

Allow to cool and enjoy with a good cup of coffee ☕️🍪

Homemade pizza 🍕 yummy
Topped with zucchini , red onion , shredded mozzarella and buffalo mozzarella Basil 🌿 pesto and prosciutto and fresh rocket 🚀

The great thing about pizza is it’s a simple and tasty dish the we all love and you can top it with all the tasty toppings your heart desires

Pizza dough recipe

3/4 cup warm water
1 packet of dry yeast
2 cups double 00 flour or good quality plain flour
1 teaspoon sugar
3/4 teaspoon salt
3 table spoons olive oil

Method

Add Warm water , sugar and dry yeast together and set aside and allow to bloom

In a separate bowl add flour salt and olive oil then add yeast warm water and sugar mix and begin to kneed together to form a dough
How to tell if dough is good to go the dough should bounce back

It’s FRIDAY and this is our mid week cocktail 🍸 of the week but here we are end of week celebrating a little , why you ask cause. We made it ! So sit back and relax where ever you are in this world and enjoy

Here is what you need
Your favorite gin , Aperol some grapefruit juice fresh squeezed is best

We call this treat an
ITALIAN GREYHOUND

Recipe
60m gin
30m Aperol
130m grapefruit juice

Ice and stir
If you want the full feeling
Garnish the rim of the glass with raw sugar and fine chopped rosemary and to finish a slice of grapefruit and a sprig of rosemary 🌿
