SA Chefs is a SAQA-recognized Professional Body and is a Level 2 BBBEE provider. Its core purpose is to set and maintain the highest level of culinary excellence, food standards and professionalism throughout South Africa. We accomplish these goals through the transfer of skills and the upliftment of individuals, our members… ‘The South African Chef’. One of our many objectives is to have a significant impact on the careers of the chefs with whom we share the knowledge that our members have acquired through international food promotions, competitions, workshops, educational conferences and various other learning experiences. SA Chefs currently has over 12 000 members, who include catering and hotel company directors, restaurateurs, chefs, cooks, culinary educators, apprentices and trainees and can be found in every type of catering activity. The governing body of SA Chefs is a board of directors – 10 leaders in the catering world, elected to serve the interests of the Association in a voluntary capacity. Our training and demonstration facility at the SA Chefs headquarters houses the Southern Sun Centre for Culinary Excellence, with a state-of-the-art Skills Kitchen and Culinary Theatre and a reference library. This was created in partnership with the University of Johannesburg and built with sponsorship from companies in the hospitality industry. This is where we fulfill our mandate of training, offering subsidised, basic skills courses to members of the hospitality industry, be they formal or informal. Culinary Team South Africa has represented our country in the Culinary Olympics since 1980 and received official team status from the Bureau of Heraldry in 2008, becoming South Africa’s official representative in the culinary world. The Team is run on sponsorship and they meet regularly to practice both the Cold Table and Hot Kitchen, as these are the two sections of the Olympics.

🇿🇦 Heritage on a plate | Meet Chef Makgobokele Nchabeleng

For Team Masakhane’s Chef Makgobokele Nchabeleng, heritage tastes like freshly slaughtered chicken with morogo and pap – and carries memories of her grandmother’s home in Limpopo.

Born and raised in Norkem Park on Johannesburg’s East Rand, Makgobokele remembers visiting her grandmother, whose garden and land provided much of the family’s fresh produce. As children, they would walk with her to the farm near the mountain to plant seeds, returning when the seasons changed to harvest what they had helped grow.

Her grandmother would send the children to a neighbour with a wheelbarrow to buy a live chicken. Back home, the chicken would be prepared while her grandmother picked fresh morogo from the garden. The family would then gather on the stoep, sitting together on a large reed mat to eat. “It’s so close to my heart because it’s such a staple in the Pedi community.”

Makgobokele is a private chef who trained at CTIA (Chefs Training & Innovation Academy). As a member of Team Masakhane, she is preparing to represent South Africa at the 2026 Culinary World Cup in Luxembourg.

“It warms my heart to know that the stories and culture of my people will be told through my craft on a global stage. Truly an honour!”

🇿🇦 Heritage on a plate | Meet Chef Donaldson Madubela

For Culinary Team SA Team Masakhane Head Coach Chef Donaldson Madubela, heritage tastes like sour sorghum porridge – a staple he grew up eating and still enjoys today.

Donaldson, who is Executive Chef of NH Johannesburg Sandton, was born and raised in Mashaeng, Fouriesburg, in the eastern Free State, where slow-cooked staple foods were a familiar part of life. Sorghum in particular has stayed with him, whether prepared as sour porridge or used in a salad.

His grandmother introduced him to sour sorghum porridge and, for Donaldson, her version set the standard. “I still believe that if you’re looking for the best sour sorghum porridge, you need to go to the eastern Free State. They make the best all the time.”
Part of what Donaldson enjoys is the process itself – fermenting the sorghum and then cooking the porridge.

As Head Coach of Team Masakhane, Donaldson is now helping prepare South Africa’s chefs for the 2026 Culinary World Cup in Luxembourg. For him, taking South African heritage to the world also means celebrating the quality of the ingredients produced at home.

“South Africa is blessed with good-quality produce. For me, it makes it much easier to cook the heritage food we are used to and introduce it to the world so that they can try it.”

🇿🇦 Heritage on a plate | Meet Chef Elizabeth Ncube

For Team Masakhane’s Chef Elizabeth Ncube, heritage tastes like a Sunday seven colours – dombolo or samp, beef stew and sides of coleslaw, potato salad, beetroot, salsa and creamed spinach.

Elizabeth grew up in Weltevreden Park, Johannesburg, where some of her earliest food memories were created in the kitchen with her grandmother. Trying foods she didn’t always understand at first broadened her curiosity about food and helped spark her love of cooking.

Her mother introduced her to the Sunday seven colours that has become such an important taste of home. But there has since been a changing of the guard in the family kitchen. "I’ve mastered it over the years and I currently hold the title at home for making it in the best way.”

A graduate of HTA School of Culinary Art, Elizabeth now works at Saxon Hotel, Villas and Spa and is preparing to represent South Africa with Team Masakhane at the 2026 Culinary World Cup in Luxembourg.

“It brings me a lot of joy and pride to be able to showcase and represent South African heritage on a global stage. It also means that I will be opening doors and inspiring young chefs, letting them know that they should never give up on themselves in this tough industry.”

🇿🇦 Heritage on a plate | Meet Chef Edward Clegg

For Chef Edward Clegg, heritage tastes like a Sunday roast – a tradition that reflects both his English family background and the South African home in which he grew up.

Raised in Alberton, Johannesburg, Edward remembers food as a constant throughout his childhood. At the heart of those memories was his mother and the sense of comfort her cooking created.

“My mother’s cooking always makes me feel better and safe.”

Watching her in the kitchen also planted the seeds for a culinary career that would span more than 25 years.

Today Edward is a Chef Lecturer at The Swiss Hotel School South Africa, having completed his culinary training at Bournemouth University in the UK. He has represented South Africa internationally during his career and is now helping to develop the next generation of chefs.

As part of Team Masakhane, the opportunity to once again take South Africa to an international stage carries particular meaning for him.

“The world loves our hospitality and our people. My blood is green and gold, and forever I will be South African.”

For Edward, Luxembourg is another opportunity to share that South African spirit with the world – this time while helping a new generation of young chefs do the same.

This Heritage Month, we’re celebrating the people, places and food stories behind Team Masakhane – and the South African heritage they’ll take with them to the world stage. 🇿🇦

🇿🇦 Heritage on a plate | Meet Chef Pholoso Sebola

For Team Masakhane’s Chef Pholoso Sebola, heritage is as much about the feeling around the table as the food on it.

Born in Pretoria and raised in Norwood, Johannesburg, his strongest food memories are of simple meals made at home, familiar aromas filling the kitchen and the family gathering together.

One dish in particular stands out: his mother’s pasta bolognese made with both spaghetti and penne. The combination happened by mistake – but it worked so well that it became part of his food story.

“My mom will always make the best version of it.”

Chef Pholoso, who works at Hotel Melrose Arch and trained at HTA School of Culinary Art, is now preparing to represent South Africa as part of Team Masakhane at the 2026 Culinary World Cup in Luxembourg.

For him, that means taking more than his culinary skills to the international stage.

“It’s an opportunity to share our culture, food, traditions, stories and unique identity with people from another part of the world. It represents where I come from while also showing that South African talent and creativity belong on an international stage.”
