After a career as a nursing sister and a long standing passion for cooking and baking Janet Sawkins founded Madeleines. In 2003 she began training and lecturing at the school. This week’s special has been chosen by Nosi, one of the hardworking faces behind the scenes at Madeleines!

You’ll find Nosi helping out in both our hot kitchen and bakery, always ready to lend a hand wherever she’s needed. She’s incredibly helpful, hardworking and, of course, keeps us entertained along the way! Her cheerful personality and willingness to pitch in make her a much-loved part of the Madeleines family.

Her choice is Nosi’s Beef Bolognese with Penne – tender beef mince slowly simmered in a tomato and herb sauce, tossed through perfectly cooked penne and finished with a generous sprinkle of Parmesan. A classic, hearty favourite packed with flavour!
