Our Prawn Rissoles have already become a firm favourite at Vamilia — handmade with love and always perfect for sharing. ❤️

🍽️ FEATURE DISH: UNCLE TONY’S COMBO ❤️

This one is cared for.

At Vamilia, Uncle Tony’s Combo is more than just a meal — it’s one of our signature dishes and a tribute to my late and great father, Uncle Tony. 🙏❤️

This beautiful combo is served in two separate bowls, each with its own sauce and its own attention to detail.

🥩 The Trinchado
We use 150g of tender beef fillet cubes, seared in a French carbon skillet with coarse salt and bay leaves.
The pan is then deglazed with our homemade Trinchado sauce — a sauce that takes around 4 hours to prepare.
That rich, flavour-packed sauce soaks beautifully into the fillet, and because fillet is such a tender, sauce-friendly cut, it has become incredibly popular with our guests.

🦑 The Calamari
We only use baby C5 calamari — whole calamari, frozen at sea in blocks, that we clean in-store daily.
The tubes are grilled in a French carbon skillet with our special fish spice, then finished in either our homemade lemon butter sauce or our house mild peri-peri sauce — both made in-house with love.

Running a small restaurant is one of the toughest things anyone can do. Behind every meal served are long days, sleepless nights, financial pressure, and an incredible amount of passion.

We were saddened to hear that Good Bird Kitchen has closed its doors, even if only for now.

As neighbours in the local hospitality industry, we wanted to acknowledge what you built. Your commitment to quality, your friendly team, your beautiful branding, and some of the best free-range chicken dishes around certainly didn’t go unnoticed. Personally, your chicken biryani remains one of the finest I’ve ever had.

Thank you for adding something special to our community.

We sincerely hope this isn’t the end of your story. Sometimes the road takes an unexpected turn before leading to something even greater. We hope the right opportunity finds you, and that one day we’ll see Good Bird Kitchen serving the community again.
