Digging in to this deliciousness
Tried breyani with basmati rice for the first time and I must say I'm super impressed
Superb indulgence before Ramadan.

Mixed Mutton Breyani (less masoor/brown lentils)
1 kg mutton (I used B grade)
1.5 tbsp ginger garlic paste
3 large onions (sliced)
2 green chillies
1/2 bunch thyme
2 grated tomatoes
Some mint (chopped)
Some dhanyia (chopped)
5 tbsp rombo rossi or mixed masala
3 tsp kashmiri chillie powder
1/2 tsp turmeric powder
1 tsp breyani powder
1 tsp dhanyia jeera powder
250ml sourmilk
3 potatoes (coloured with egg yellow or tumeric and fried till golden)
Salt to taste
Marinate your mutton with sourmilk, ginger garlic paste, all the spices above, green chillie,thyme, grated tomato, chopped mint and dhanyia and salt to taste. A min of 3 hours
2 cups rice
Half cup masoor dhal/brown lentils
2 cinnamon sticks
2 bayleaves
3 elachi pods
Wash and soak separately for 2 hours, then parboil masoor with with half tsp turmeric powder, 1 elachi pod 1 sticks cinnamon,1 small bayleaf and salt to taste( just until its firm but soft) maybe 10 to 15min
Parboil rice with 2 elachi pods, 1 cinnamon stick,1 bayleaf, 2 tsp of tumeric and salt to taste. Until about 3/4 cooked, about 20 to 30min
Preheat your oven from 30min before on 160°c.
In a pot add oil and a little ghee on medium heat, add onions and cook till nice and golden brown, once you reach this point, remove half the onions and set aside, remove any access oil in pot, leave half onions behind and mix in the marinated meat.
Cook on medium heat for 50 minutes stirring occasionally and adding a little water at a time while cooking. Make sure you have a little water/gravy left before layering to go into the oven.
Remove from heat at 50min then layer fried potatoes,masoor, then add the rice ( to get the different yellows, add a quarter of the rice to a bowl, then add in egg yellow stir through till all the rice is coated) add this at the top of the the other rice, then add the golden onions that you kept aside. Cook for 45 min to an hour in the oven. Mix throughly when it comes out of the oven, take care with not breaking the potatoes, garnish with chopped dhanyia and mint. Enjoy
