As we conclude our reflections on the 2026 Prue Leith Culinary Institute Cape Food & Wine Tour, we’re reminded that some of the most valuable lessons are learned through experiences, conversations and the people who inspire us along the way.

From exploring the rich heritage and traditions of !Khwa ttu, to an exclusive private tasting with the owner of Dalewood Fromage, discovering the culinary
excellence of Wild Peacock Products, and visiting Galjoen_CPT, one of our proud alumni’s restaurants,
our students experienced firsthand the passion, craftsmanship and innovation that define South Africa’s remarkable food and hospitality industry.

At Prue Leith Culinary Institute, we believe the best hospitality education happens both inside and beyond the classroom. These experiences challenge perspectives, build industry connections and inspire the next generation of culinary professionals.

As our students return this week, we’re reflecting on one of the highlights of 2026: the Prue Leith Culinary Institute Cape Food & Wine Tour, where learning came to life through unforgettable industry experiences.

One of the tour’s standout moments was an extraordinary visit to Creation Wines, where
our students enjoyed an immersive sensory food and wine pairing.

This unique experience challenged them to explore how flavour, aroma, texture and wine work together to create exceptional dining experiences, while deepening their understanding of pairing principles, guest experience and culinary creativity.

At Prue Leith Culinary Institute, we believe the most valuable learning happens both inside and beyond the classroom.

From our kitchens to the world stage, and now to the halls of French honour.

We are immensely proud to celebrate our alumna, Chantel Dartnall, on receiving one of the French Republic’s highest distinctions: being appointed Chevalier de l’Ordre national du Mérite by decree of the President of France.

A graduate of the Prue Leith Culinary Institute in 2000, Chantel has continued to redefine South African culinary excellence on the global stage. From being named among the world’s best chefs to now receiving this extraordinary knighthood, her journey is one of passion, artistry, resilience, and world-class innovation.

This honour is not only a celebration of her remarkable achievements, but a proud moment for South African gastronomy and for every aspiring chef who dares to dream boldly.

It was a fascinating journey through one of Spain’s most remarkable regions, Andalucia, as part of the ICEX Hospitality Programme visit.

Beyond the delicious Sherry of Jerez and beautiful Alhambra of Granada, we were met by the extraordinary greenhouses of Cooperativa La Palma where we enjoyed a fantastic lunch showcasing the area's exceptional produce, to visiting the facilities of Unica Group and gaining insight into the region’s agricultural miracle, this was a masterclass in innovation and resilience. In a water-scarce environment, technology, expertise and determination have transformed the landscape into a greenhouse miracle, producing astonishing quality, flavour and abundance.

We also explored the fascinating olive groves and olive oil production at learning how tradition and modern techniques combine to create outstanding products. The visit concluded at the spectacular salt flats of Cabo De Gata, a landscape of striking natural beauty and ecological importance.

A region of extremes—where desert conditions meet agricultural excellence, where innovation drives sustainability, and where rich culture is expressed through phenomenal flavours. An inspiring experience and a powerful reminder of what can be achieved when ingenuity works in harmony with nature.

One of the highlights of the ICEX Hospitality Programme in Spain was a visit to Riofrío Caviar, Riofrío Caviar Ecológico home to the world's first organic caviar producer.

Nestled in the pristine waters of Andalusia, Riofrío has pioneered sustainable caviar production while protecting one of the planet's most ancient fish species — the sturgeon. These remarkable fish have existed for more than 250 million years, surviving since the age of the dinosaurs.

During our visit, we learned about the fascinating life cycle of sturgeon, the meticulous process of producing premium organic caviar, and the importance of responsible aquaculture in preserving these extraordinary creatures for future generations.

The experience concluded with a memorable tasting of Riofrío's exquisite organic caviar paired with champagne, followed by a tasting of Spain's famous Jamón Ibérico de Bellota from Jabugo — a perfect celebration of some of the country's finest gastronomic traditions.

A wonderful blend of history, sustainability, craftsmanship, and exceptional flavours. Experiences like this remind us that great food is not only about taste, but also about heritage, conservation, and the people dedicated to preserving both.

Attending , Spain earlier this month with ICEX ( ) has been a truly phenomenal experience. The depth of Sherry education, the warm hospitality, and the insightful lecture from César Saldaña (César Saldaña) made it especially memorable.

Visiting the vineyards and cellars of BODEGAS HIDALGO LA GITANA and fundador brought the region’s rich winemaking heritage to life and put everything into perspective.

A standout moment was the jamón and Sherry tasting - Gusto del Sur - celebrating the beautiful flavours of Andalucía and demonstrating just how versatile and food-friendly Sherries can be.
