The story behind The Pinsa Club.
What started as a passion for Italian food has become a pioneering culinary journey. Christian Wilderer, known for his family’s legacy in world-class distilling and hospitality, travelled to Rome to train under the masters of Pinsa Romana.
There, he immersed himself in the art of Pinsa-making – learning the science behind its light, sourdough-based dough made from wheat, rice, and soy flours. After intense hands-on training, Christian became South Africa’s first certified Pinsaiolo.
Now, together with Core Catering, he brings this unique style of pizza home — introducing Cape Town to Pinsa: the Evolution of Pizza. Light, crisp, easy to digest, and loaded with flavour.
