Indian Chicken Curry from the Gujarati region, influenced by the Persian Gulf along this coastline. Chicken is marinated in Yoghurt and Spices. Masala in this area is fresh style of Ginger, Garlic, Green Chillies, Turmeric, Mustard Oil and Lemon. In addition, Tomato, Cinnamon, Cardamom, Star Anise, Cloves, Coriander et al. This Curry is definitely a "standard bearer" for Indian regional dishes.

Fennel, Coriander, Cumin, Peppercorns, Mustard Oil, Black and Green Cardamom, Cassia Bark, Cloves, Ginger, Chillies, Nutmeg et al. Coconut Milk and Yoghurt. Green Chillies fried in Coconut Oil. Definitely a favourite among the many Lamb Curries I have made.

Sauce is the the heart of this Swiss classic, prepared in the pan using the browned tidbits of the Pork, wine to deglaze. It was so enjoyed in our restaurant, we served it with Spaëtzle, so Egg Noodles would be perfect or like the Swiss traditionalists, with a Rosti.

Curry made with a Yellow Paste foundation, 5 spice, Turmeric, Star Anise, Dried Red Chilli, Tamarind, Cardamom, Coconut Milk, Lime Zest et al. Umami bomb coming from the essential Fish Sauce. Found at street stalls and prominent restaurants alike. Traditionally served with Rice, Vermicelli or Baguette, a consequence of colonial days.
