Sweet Orange — the hidden gem in our range. Not quite jam, and certainly not marmalade. Just whole slices of orange, slowly cooked until tender and glossy, resting in their own golden syrup.

It’s the quiet favourite in our range. The one you might overlook until you taste it — and then wonder how you ever went without it.

A slice over vanilla ice cream, alongside a baked cheesecake, or on a warm scone with fresh cream. Simple pleasures, made a little more special.

And as festive tables begin to fill, Sweet Orange finds its moment to shine.

From seed to berry.
Five photographs, one season still to come: first the seeds are sown, then the seedlings go into the ground. The rows fill out, the flowers appear, green berries follow — and only late in summer do they turn black and ready to pick. What will go into a jar in March begins now, with seed. Nastergal gives us one harvest a year, and only as many jars as the season allows.

Die patroon bly dieselfde: in Oktober en November klim verkope byna tot dubbel dié van Augustus en September — skoolvakansies, Kersfees, lekker eet en geskenke. Nastergal word net een keer per jaar gemaak, en die voorraad hou net so lank. Granaatjellie is ook gewoonlik teen November uitverkoop. Groothandelpryse geld vanaf 24 bottels en meer, gemeng oor die reeks. Beplan vroeg en hou die rakke vol vir al die lekker tye wat voorlê.

Tomorrow is Braai Day.

Three things to do at the fire with what is already in your cupboard:

Nastergal over the chops — brushed on in the last five minutes over the coals, until it glistens. Tomato jam on a roosterkoek, with butter. Pomegranate jelly with the lamb, as the leg comes off the fire.

Take the jar out of the cupboard tonight, and tomorrow it isn't a search.

This photograph is from the day the new kitchen opened — the whole team, and cake on the table.

The pots are the same. The recipes are the same. The hands are the same. Only the roof above them is new.

Proudly, stubbornly South African.

The nastergal berry is indigenous. The fields are ours, and the hands that pick it belong to the people who work this land. It is cooked here too — in a pot over a gas flame, in a farm kitchen outside Amersfoort, not on a factory line somewhere...

We can’t simply buy nastergal berries. Hardly anyone grows it, and even fewer still make konfyt from it. There is only as much as this farm can grow and pick — and not a jar more.

More than twenty years ago, Marie de Jager cooked the first pots here. We still make it much the same way today. That, to us, is what Heritage Month is about: not a flag on a label, but keeping something local growing, cooking and carrying on.

Cape gooseberries.

Appelliefies, in Afrikaans. Small and golden, tucked inside their paper lanterns. They have a sharp little bite — the kind that makes you frown at the first one and reach for a second. If nastergal has a rival on our shelves, this is it.

We cook them with just enough sugar to keep that bright, tart flavour. The result is an amber jam that is especially good with a soft cheese — although warm bread does just as well.

Available in 500g and 175g, from the farm.

Konfyt of jam?

Op die etiket staan jam. In die kombuis sê ons konfyt. Vrugte, suiker, ’n pot en genoeg tyd — dis waar dit begin.

Die woord konfyt kom van die Nederlandse konfijt, en soos die resepte self, is dit van geslag tot geslag aangegee. Lank voor daar etikette was, was daar al ’n pot konfyt op die stoof.

Erfenismaand voel na ’n goeie tyd om albei woorde te gebruik — en die ou smaak te bly onthou.

Spring is in the air.

It’s September, and the grass is still winter-yellow. Up here on the Highveld, spring comes on the wind, in the dust, and in afternoon skies that keep promising rain.
The days are stretching longer. Nastergal seeds have been sown — waiting with us for summer.

What will fill the jars in March begins quietly now, with seed, soil and the promise of rain.
