Salt, time, temperature, and an anaerobic environment. Those four things are what turn a vegetable into a live-culture food. Skip any one of them and you've got a pickled vegetable, not a fermented one.

The pickle on the grocery store shelf has never met a lactic acid bacteria in its life. If it doesn't need refrigeration, fermentation never happened. 🥒
