🍲 Grits (Salted, Not Sweet! 😉)

Let’s go ahead and settle it now: Real ones know grits ain’t supposed to be sweet. 😂

We grew up on bowls of hot, buttery grits—sometimes with eggs, sometimes with sausage or shrimp, but never with sugar. A pinch of salt, a pat of butter, maybe even a little cheese... that’s home.

Served early in the morning with gospel playing low, or late at night when you needed something to stick to your ribs. Grits were always the answer.

🔥 How to Make Classic Grits (Savory Style)
Ingredients:

1 cup old-fashioned grits

4 cups water or milk (or a mix)

1 tsp salt (adjust to taste)

2–3 tbsp butter

Optional: shredded cheese, pepper, or a splash of cream

Instructions:

Bring water and salt to a boil. Slowly stir in grits.

Reduce heat to low and simmer, stirring often, for 20–25 minutes.

Stir in butter (and cheese if using). Serve warm.

🍗 Bang Bang Chicken Fried Rice

Prep: 15 minutes
Cooking: 20 minutes

Serves: 3–4
🧾 Ingredients
For the fried rice:
3 cups cooked cold rice (day-old is best)
2 eggs
1 cup diced chicken (or leftover chicken)
1/2 cup peas
1/2 cup diced carrots
3 tbsp soy sauce
2 tbsp oil
2 cloves garlic (minced)
2 green onions (chopped)
For Bang Bang sauce:
1/4 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp sriracha (adjust spice)
1 tsp honey
🍳 Instructions
Cook chicken:
In a pan, cook diced chicken in a little oil until golden. Remove and set aside.
Scramble eggs:
In the same pan, scramble eggs and set aside.
Cook veggies:
Add oil → sauté garlic, carrots, and peas for 2–3 minutes.
Add rice:
Add cold rice, break it up, and stir-fry on medium-high heat.
Season:
Add soy sauce, cooked chicken, and eggs. Mix well.
Make sauce:
Mix all Bang Bang sauce ingredients in a bowl.
Combine:
Drizzle sauce over rice (or serve on top). Toss lightly.
Finish:
Garnish with green onions and sesame seeds.
