Cajun Beef & Sausage Linguine with Creamy Spinach Sauce

Ingredients
* 1 lb linguine pasta
* 1 lb ground beef
* 1 lb Italian sausage, casings removed
* 10 oz frozen spinach, thawed and squeezed dry
* 4 tbsp unsalted butter
* ¼ cup all-purpose flour
* 3 cups whole milk
* 1 cup chicken broth
* 1 cup heavy cream
* 1 cup grated Parmesan cheese
* 1 cup shredded mozzarella cheese
* 1 tbsp Italian seasoning
* Optional Cajun seasoning: 1–2 tbsp (adjust to taste)
* Salt and black pepper, to taste
* 3–4 cloves garlic, minced (optional, but highly recommended)
* Chopped parsley for garnish (optional)
Instructions
1. Cook the Pasta
* Bring a large pot of salted water to a boil.
* Cook the linguine until al dente according to the package directions.
* Reserve 1 cup of pasta water, then drain the pasta and set aside.
2. Brown the Meat
* Heat a large skillet or Dutch oven over medium-high heat.
* Add the Italian sausage and ground beef.
* Cook for 8–10 minutes, breaking the meat into crumbles, until browned.
* Drain excess grease if necessary.
* If using garlic, stir it in and cook for 30 seconds.
* Season with the Italian seasoning and Cajun seasoning.
3. Make the Creamy Sauce
* In a separate large saucepan, melt the butter over medium heat.
* Whisk in the flour and cook for about 2 minutes, stirring constantly, to make a roux.
* Slowly whisk in the milk until smooth.
* Add the chicken broth and heavy cream, whisking continuously.
* Simmer for 5–7 minutes until the sauce thickens.
4. Add the Cheese
* Lower the heat.
* Stir in the Parmesan cheese until melted.
* Add the mozzarella and stir until smooth and creamy.
5. Add the Spinach
* Stir the squeezed-dry spinach into the sauce.
* Simmer for 2–3 minutes until heated through.
6. Combine Everything
* Add the cooked beef and sausage to the sauce.
* Fold in the cooked linguine and toss until every strand is coated.
* If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
* Taste and adjust with salt, pepper, or additional Cajun seasoning.
7. Serve
* Garnish with extra Parmesan cheese, chopped parsley, and a sprinkle of Cajun seasoning if desired.
* Serve with garlic bread and a fresh salad.
