We’re thrilled to introduce this season’s Dashi Omakase Series: Oden Edition, inspired by the quintessential Japanese winter tradition—and a menu expressing our passion for dashi and the exceptional seafood we source directly from Toyosu, our home market in Tokyo.

While rooted in classic Japanese cuisine—and oden in particular—this menu is infused with curiosity, playfulness, and a sense of discovery: a joyful journey of umami and subtle surprises.

The first course awakens your appetite with an explosion of natural umami.
The second highlights premium Toyosu seafood.
The third and fourth showcase timeless oden classics.
And the fifth through seventh express our belief that dashi can—and should—be far more free and creative than people expect.

A Special Wine Pairing Experience

We traveled to the mountains of Napa Valley in search of an American wine that could truly complement dashi and Japanese cuisine.

At Kenzo Estate Winery, nestled 1,550 feet above sea level, we discovered wines of remarkable depth—where umami, acidity, and minerality coexist in perfect harmony.

Kenzo’s red wines reveal notes of black cherry, cassis, herbs, spice, and minerality, while the white expresses lemon, gooseberry, and subtle earthiness, leaving an elegant, lingering finish.

They pair beautifully with the gentle saltiness and refined umami of soy sauce and dashi.

We were deeply inspired by founder Kenzo Tsujimoto’s vision—to craft wines of the highest caliber that embody Japanese refinement and artistry, harmonizing gracefully with the elegance of Japanese cuisine.

We’re excited to share the timeless ritual of Japan’s seasoned drinkers.
In Japan, motsuni—a hearty stew of beef intestine simmered with vegetables, soy sauce, miso, and dashi—
is a beloved classic.

When the umami of beef intestine, soy sauce, and dashi meets the sweetness of vegetables,
you simply can’t put your beer down.

This time, we’re using a generous amount and a special blend of dashi to bring out even deeper umami.
We’re collaborating with Saltfields Rice Lager to pair with our motsuni.Its koji umami and gentle rice sweetness pair perfectly with its richness.

What began as a pop-up is now here to stay—our ongoing seasonal omakase journey of dashi and fish. The first edition is the Fall Izakaya Edition.

In Japan, fall is called the “season of appetite.” As the summer heat fades, the season brings an abundance of flavorful vegetables and fish.

This menu features fall favorites:

-Sweet Hokkaido hotate scallops
-Ikura salmon roe
-Rich seasonal fatty fish from Toyosu
-Umami-rich mushrooms and autumn vegetables

All crafted with our signature dashi and traditional Japanese seasonings.

We’re excited to share a unique project that brings together umami and sustainability.

In collaboration with Eleven Madison Park, we created a new plant-based dashi made from vegetable trim from their kitchen, blended with our traditional dashi ingredients.

Food waste solutions often come with flavor compromises — but not this time. By drying the vegetables and transforming them into dashi ingredients, we were able to concentrate their umami five to tenfold.

Centered around the deep umami of king oyster mushrooms, this dashi is layered with the refined umami of Rishiri kombu, the sweet earthiness of Koshin shiitake, the natural sweetness of Awaji Island onions, the gentle bitterness of Brussels sprouts, and a touch of garlic that brings everything into focus.

This dashi serves as a versatile and flavorful base, enhancing umami in dishes across all cuisines.

This product is available at our store and online, with only a limited number available this time.

We hope this project inspires more restaurants and home cooks to dry vegetable trim, enhance umami, and use it as a base in their cooking.

Water as an Ingredient

Soft water is best for making dashi—especially when using kombu. While most regions in Japan naturally have soft water, the United States is divided into soft and hard water areas. Fortunately, New York has soft water, making it ideal for brewing high-quality dashi. In one experiment using kombu, soft water extracted more sweetness and umami, with noticeably less bitterness.

The rich kombu dashi culture of Kyoto also developed in part thanks to its exceptionally soft water. On the other hand, Tokyo’s water is harder than Kyoto’s, which makes it harder to extract the delicate umami of both katsuobushi and kombu. As a result, soy sauce tends to be used more heavily in Tokyo-style dashi.

When preparing dashi in hard water regions, we always use a water softener or opt for soft mineral water to ensure the best results. If you’re a chef or home cook in a hard water area and need a softening solution, we recommend Cleansui, which offers both household and commercial-grade systems.
